..and sad to see, such craftsmanship has been watered down to mass produced cheap, not lasting knives of endless profit making 'throw aways'. Whereas the real high quality knives are made to last a lifetime or 2.

Why is coal screened? I look and wonder with my bare hands when working with hot metal, it’s clear that they don’t take it in their hands, well, the slightest hit immediately burns I can not find words about the professionalism of the master, super work done everything is very cool

I do not doubt the Quality of Any of these products, especially the knives, a great deal of work goes into them, and that is the difference between a handcrafted blade and a machine made blade, and the fact that the Kitchen knife maker's products are used by 90% of Japanese chefs is astounding proof as to their quality, having said that, I cannot stand the single bevel knife, there are rare occasions where they are better than a double bevel, and that is mainly in arts and crafts that require a flush cut, and I have a Kiri dashi knife myself for such occasions, but for working in the Kitchen, I require double bevel blades because I find that single bevel blades are too difficult to get equal and perfect slices every time. I'm sure with enough practice I could accomplish the same, but I feel that single bevel blades are only half finished You want to impress me, make a hand forged San Mai blade with hollow ground bevels on both sides giving me a blade that can cut even the ripest of Tomatoes into paper thin slices perfectly level throughout, THAT is the type of blade I'm willing to pay 4-5 hundred dollars for, not for a single bevel blade, Just my own opinion, I'm sure that there are others who feel the opposite to what I do, but I like what I like and I make no excuses for it, it is my right to do so.

The billet is hit with water on it to make a small steam explosion. By doing thus that small explosion blows the scale off the billet. Scale is essentially rust, it's the air hitting the metal and creating a layer over it that is no longer attached to the metal, is very weak, and is now an impurity you want rid of.

Close but incorrect. Scale is actually very hard. Harder than the surface of the steel in many cases. The reason the scale is removed is to ensure the faces of the steel are clean and therefore stick together correctly. A layer of scale between 2 surfaces would prevent or cause imperfections in the forgeweld.

I think the original purpose of folding the billet was to beat out the impurities. It makes the steel stronger but modern steel doesn't "need" folding. It is pretty, imo.

I'll help here. Tamahagane, japanese bloom steel is not consistent in carbon distribution when it is created in a tatara. The product when removed must be broken up, restacked and forge welded back together. By doing this, low carbon, medium carbon and high carbon steel Tamahagane pieces are blended together. Yes, some impurity is forged out but the scientific reason is to distribute the carbon throughout the steel more consistently creating a medium to high carbon billet suitable for hardening. At the time, I don't believe smiths understood this and I feel like even today many probably still don't. Metallurgy is complex and misnomers like folding is to strengthen the steel or to remove impurities are kind of misleading. You are correct though, modern steel and the manner in which it is created does not require folding at all. Despite common myth, a damascus (pattern welded) knife is not stronger than a monosteel (one singular steel) knife. Mainly due to various steels being added to the billet, creating inconsistencies throughout the edge. Looks pretty, however they don't all harden the same. Close, if steels are chosen that are very similar but not the same hardness.
