It’s also because in the old seasons the boys had very generic personalities, they didn’t have any substance so his only personality trait was being monotone and flipping people off, but as the seasons progressed, especially with the Tweek x Craig episode, and his Super Craig persona, Craig has had more character development.

Somehow, I have a theory that Craig flips people off not only because of his family habits but also because flipping people off is his only way to express his emotions, including anger, annoyance, and some other negative emotions he didn't really show in front of people. Craig didn't flip as much as he did before after his at-first-pretend-then-become-real relationship with Tweek, who got Craig to express his emotions more often than how he once used to be.
