I'm using the AI for all the vehicles except the one I'm driving and I'm pausing the game inbetween to spawn new cars, change settings etc :)

With cars or trucks having big wheels it's relatively easy. Just turn the steering wheel to the other side and go backwards or forwards. With a little patience you'll get it up

There is no World of Mods car here m8. The F40 (Bolide Corse to be specific) at the 2nd chase is a private mod by NinetyNine. High quality job there, not like World of Mods cars
