Choosing stone flooring for the kitchen is definitely an excellent choice. As you mentioned, it makes it way easier to clean up, specially in multigenerational family homes, where things get busy & chaotic at times.

It kills your feet and knees. If you drop a plate or glass it will shatter immediately, whereas this won't necessarily happen with a softer floor. Also, stone is very cold so there is extra expense installing heating and cost of using that head. I recently had a stone floor removed so I speak from experience.
