This bakery makes a wide variety of breads. Even though I can't eat all the bread, Italian bread with olives and Turkish bread taste very good... How do you think bread is made? I lived in Ankara Turkey for 2 years in 1982-84. I remember the ekmek so well. It was the best. I stopped going to the balgat and buying wonder bread and bought local. Turkey was a truly special place back then.

Тяжелейший труд пекарей. Работал год в такой пекарне. Просто с ног валился в первое время, но привык. Тоже умеют печь хлеб. Уважение мастерам.

@@elenapimenova1508 летом температура теста должна быть низкие а то хлеб не очень будет Только летом используется лёд а зимой температура градусов норма для теста поэтому в зимой не надо

@@cheguevara3897 поняла, брожение теста чтобы замедлить. Я тесто на хлеб ставлю в холодильник на ночь, утром выпекаю. Получается медленная ферментация. Спасибо))

@@elenapimenova1508 лёд добавляется в так называемые бездрожжевые хлеба (такая технология у бездрожи), но тут я в замешательстве, т.к. в конце замеса в тесто бросают дрожжи.

Моют наверно ,а может нет Я работала на хлебокамбинате ,не долго правда, тяжело И в кармане нагрудном лежало зеркальце,я нагнулась и оно упало прям в чан с тестом и быстро вращалось Очень расстроилась и боялась кому то сказать В конце смены ,сказала бригадира,она засмеялась, говорит ,что только не роняли ,все смололось Так что думайте сами ...

When I was in high school I used to work in a bakery, the thing I admire greatly in this video is how fast they roll the dough, It requires a lot of practice, also the way they mix the dough is unique, adding yeast at the very end and also putting ice into the mixer!? But in the end, proofing and scoring the dough is very similar. This job for me was a blessing. Thanks x the video

Я работал в Турции, в такой же пекарне, по такому же принципу работы. И скажу вам одно, это очень тяжёлый труд. И этот батон очень вкусный, в первый день когда туда устроился, съел один такой горячий батон полностью.)))

I was stationed in Turkey in the early 1990s. A loaf of this bread cost me less than 10 cents. It tastes way better than it looks. I miss those days

I was stationed in Turkey late 70's. Hiked over to Karamursel, bought a loaf, smeared on butter -- simple, excellent dinner. I will say that the third I didn't eat was a brick the next morning. It's okay, a good memory.

....I live in an ex-communist country....after 1990 when communism collapsed, I was able to travel to other countries...the first foreign country where I have traveled since the 90s, several times, it was Turkey....during my stay there, I bought bread from Turkish bakeries...the bread made by the Turks is very tasty, fluffy, white, good for any meal....and the bagels that I used to find in the morning in Istanbul, with poppy seeds, with sesame seeds, they were very fresh and tasty...there are good bakers in Turkey...tourists who go to Turkey to buy bread from the bakers...it is delicious...it can be eaten plain without anything else.. ..for the bakers in Turkey I wish "Allah be with you"...

Одна из самых древнейших профессий. А хлеб это такой продукт, который без любви никогда не получится. Труд конечно тяжелейший, не каждый сможет работать в таком режиме! Честь и хвала этим ЛЮДЯМ.

In my youth I was a baker for 13 years and have never seen a process like this! Using ice to cool the dough down (we needed to use warm water!) and adding the yeast at the end of the mixing process - that blew my mind! The depth of the oven was also amazing - I once worked with gas ovens that were about a quarter the size of those, but needed skill to arrange the bread, and care on removal! Incredible skill of the bakers. The final bread looked awesome, but I wish the machinery and the baker's clothing were cleaner! Clearly no health inspection there!

Where were you a baker? It must have been a very cold climate there... Adding ice to your dough is very common practice when baking large batches of bread as using warm water will cause the dough to ever proof before you've had the chance to finish processing the batch. We would use both ice and water that we store in the walk in fridge in order to control the rise of the bread.

in Turkey bakers should be hygenic. government sponsored them for cleaning products. they are constantly monitored by the government. if the rules are not followed, they will be fined like astronomic numbers. u can't see baker with tall or dirty fingernail. of course glove is better but this is okey for health.

Fascinating! At first I thought the bread was being loaded onto a silicone conveyor belt. Amazing skill the way that guy handled that long paddle, especially when retrieving the baked loaves. 🥖🥖🥖

@@missdjami5759 likely to keep it from getting too hot. It's being mixed vigorously and in a hot climate, if it reaches too high a temperature it will proof too quickly and not maintain structure

What got me is the skillful step where he places an array of dough on a long board then pushes the board into the oven, and leaves the dough in the oven then takes out the previous array of baked dough (bread). Precision. Zero error to knock off some bread in the array.

This world is rapidly passing away and I hope that you repent and take time to change before all out disaster occurs! Belief in messiah alone is not enough to grant you salvation - Matthew 7:21-23, John 3:3, John 3:36 (ESV is the best translation for John 3:36) if you believed in Messiah you would be following His commands as best as you could. If you are not a follower of Messiah I would highly recommend becoming one. Call on the name of Jesus and pray for Him to intervene in your life - Revelation 3:20. Contemplate how the Roman Empire fulfilled the role of the beast from the sea in Revelation 13 over the course of 1260+ years. Revelation 17 confirms that the beast is in fact Rome. From this we can conclude that A) Jesus is the Son of God and can predict the future or make it happen, B) The world leaders/nations/governments etc have been conspiring together for the last 3000+ years going back to Babylon and before, C) History as we know it is fake. You don't really need to speculate once you start a relationship with God. Can't get a response from God? Fasting can help increase your perception and prayer can help initiate events. God will ignore you if your prayer does not align with His purpose (James 4:3) or if you are approaching Him when "unclean" (Isaiah 1:15, Isaiah 59:2, Micah 3:4). Stop eating food sacrificed to idols (McDonald's, Wendy's etc) stop glorifying yourself on social media or making other images of yourself (Second Commandment), stop gossiping about other people, stop watching obscene content etc. Have a blessed day!

It's bread. Easiest dough out there. If you fail the recipe you can add more flour or water easily, especially with the mixer they have. It allows a lot of eye balling. Also there are a lot of channels on youtube throwing around words like "67.31% hydration! Such delicate balance amagad!" but in reality it's not that unforgiving. People love to make things look more delicate than it actually is for clout. In practise it's all about hard work and repetition, just as seen in the video. These people probably bake billions of Turkish style baguette alone, in their lifetime.

Measurements are pointless in something like bread anyway, as each batch will end up different even with the same measurement due to the quality of wheat, flour and yeast. You *have* to eyeball it and rely on experience to get the best result. I was watching a video from a famous pretentious youtuber (don't even want to name him to give him recognition), and he began the ingredient list with "632 grams of all-purpose flour", I had to stop the video and do a face palm right there.

@@obuw1 Quality matters as you say. I once bought a cheaper pack of flour and "tried" to make it into bread. No matter how much I hydrated it and even after I said "Fuck it, this is a runny focaccia now!" the dough just felt like rotten play dough. That was a horrible flour and I even sifted it so it was smoother. If you live in Turkey as a Turkish citizen you know what I'm talking about. Our farmers somehow manage to fail making flour. Or they spoil it on purpose I have no idea. I'll believe anything at this point. It's so sad, to see a 10000 years old food material disrespected that way. It's not like they have to invent anything!

Bende ilk önce hijyenik şartlara baktım. Başka ülkelerdede ekmek yapılan yerleri çekmişler her yer pırıl pırıl tertemiz parlıyor. Elbette unlu mamüllerle uğraşılıyor fakat dükkanı kapatmadan derleyip toparlayıp ve en önemlisi temiz bir şekilde bırakmak en doğrusu. Gıda sektöründe çalışılıyor nede olsa.

@@anjayl I lived in Turkey (where this video is taken) and in USA. The quality of bread you can buy at stores is not even comparable. You can buy sourdough or regular yeast bread, still you get much better quality in Turkey. It is always fresh baked within last few hours even in small stores with no bakery (they get it fresh delivered 3-4 times a day). Not sure where your obsession with sourdough comes from. It's the same ingredients except yeast. I like regular stone oven bread better than sourdough, it's up to your preference.

Not a bread expert, I learned how to make bread from my father's mother in the village, she made her own phyllo pastry and pasta as well. I won't say that Turkey or any country makes the best bread, I'll acknowledge that it's a pleasure to watch that people like this man here still perform their job with such passion and love. Tradition is our foundation and without that we are nothing and there shouldn't be a war when it comes to food and recipes, food is to be made with love and shared. God bless these men. Bread is always poison unless you're making some keto seed bread which bakes more like cake than bread actually. Carbs = bad. Majority of the people on Earth eat more carbs and sugars than they even need.

@@universefriend of course. You eat carbs on keto too albeit a small amount and from cleaner sources. If the sources were grown clean though, which is another rabbit hole. People usually love peanuts for example but you need to make sure they aren't full of aflatoxins, which is not easy to do. The issue here in Turkey is terrifying actually. A lot of our agriculture export keeps getting rejected by civilized countries because of reasons like this. We're like a poorer, smaller China actually. Corruption is rampant.

This world is rapidly passing away and I hope that you repent and take time to change before all out disaster occurs! Belief in messiah alone is not enough to grant you salvation - Matthew 7:21-23, John 3:3, John 3:36 (ESV is the best translation for John 3:36) if you believed in Messiah you would be following His commands as best as you could. If you are not a follower of Messiah I would highly recommend becoming one. Call on the name of Jesus and pray for Him to intervene in your life - Revelation 3:20. Contemplate how the Roman Empire fulfilled the role of the beast from the sea in Revelation 13 over the course of 1260+ years. Revelation 17 confirms that the beast is in fact Rome. From this we can conclude that A) Jesus is the Son of God and can predict the future or make it happen, B) The world leaders/nations/governments etc have been conspiring together for the last 3000+ years going back to Babylon and before, C) History as we know it is fake. You don't really need to speculate once you start a relationship with God. Can't get a response from God? Fasting can help increase your perception and prayer can help initiate events. God will ignore you if your prayer does not align with His purpose (James 4:3) or if you are approaching Him when "unclean" (Isaiah 1:15, Isaiah 59:2, Micah 3:4). Stop eating food sacrificed to idols (McDonald's, Wendy's etc) stop glorifying yourself on social media or making other images of yourself (Second Commandment), stop gossiping about other people, stop watching obscene content etc. Have a blessed day!

I've worked in bakeries in America. We CLEAN our equipment at the end of the day. These have a gross build up on the outside of the machines that shows they have NEVER been cleaned. 🤢🤢🤮🤮

Viendo todo el video, me remonté en aquella época de mi niñez en los 90' s cuando iba a ver a mi Papá (Q.E.P.D) en la Panadería donde laboraba y que fue ahí en la Panadería la Tormenta en Catia (Zona ubicada al Oeste de Caracas capital de Venezuela) donde comencé a moldear mis primeros panes, mi padre fue un Excelente maestro de Panadería con muchos años de experiencia y en su repertorio tenía una gran variedad de panes, que a decir verdad, no por el hecho que haya sido mi padre, eran muy, pero muy buenos y sabrosos, en lo personal me encantaba el gusto que tenía el Pan de Jamón, cuando llegaba esa época de Diciembre y comenzaba la temporada navideña, era una verdadera Locura porque amanecíamos haciendo pan, y a pesar de haber aprendido a moldear pan, fue una base que me ayudo en tiempos de apremios para trabajar por mi cuenta en un tiempo determinado de mi vida. Es por ésta razón que me atrevo a decir que la elaboración del pan industrial (a gran escala) es un verdadero arte, todo tiene su porque, su tiempo y su sabor. Aunque cabe destacar que la elaboración del Pan artesanal es muy distinta a la industrial.

В студенческие годы работал в булочной ночным приемщиком хлеба)))... За ночь необходимо было разгрузить пять машин с хлебом... Тяжёлый труд, скажу я Вам... А утром на лекции... И на хлебокомбинате поработал, а потом еще и на хладокомбинате работал - говяжьи полутуши разгружал)))... Кушать хотелось, а стипендия маленькая и родители не имели возможности помогать, так как оказались в другой стране после распада СССР... 1990-1995 года)))... Зато кусок хлеба всегда был)))...
