2-4 salmon filets
1-2 tbsp butter
1 tbsp garlic paste
1/4 cup chopped grape tomatoes
1/4 cup capers
1/2 diced onion
2-3 cups fresh spinach
1 cup heavy cream
1/4 cup shredded parmesan cheese
red pepper flakes
salt, pepper, garlic, onion powder, italian seasoning
1/4 tsp browning (optional)
Pasta Noodles
Roasted Garlic (1 head of garlic with the end chopped off. 1 tbsp olive oil and salt & pepper. Place in the oven, wrapped in foil at 400 for 40 minutes)

I just came home from the store with a nice piece of salmon for Friday's dinner and I was wondering how I want to cook it. I have many recipes, to me salmon is like chicken, but you solved the puzzle for me. Tuscan salmon it is! Thanks! I don't do roasted garlic in the traditional oven method. I take a small pot and put some olive oil in it. I peel as many cloves as I need and cook the cloves low and slow until they turn golden brown and soft. It doesn't take long. Voila! Roasted garlic, plus nice garlic-flavored oil to use for another recipe or to put over the pasta for pasta aglio olio.

When you flipped that salmon over. Lordt! I was ready to eat. I'll have to make this. I've never cooked salmon that wasn't in a can. What amount of sun dried tomatoes would be used if I went that route instead? I saw the question asked. I don't see chicken stock or wine measurements in the recipe. 😋

Loved it! I probably would take out the all purpose seasoning for the salmon and stick to the rest being that it made my salmon salty. I also didn’t add the Parmesan cheese being that it already reached its max on the salt. Going forward I will probably use less of the bouillon just as you advised. Thank you again for sharing!
