Just a small tip, it is way easier using gelatine-leaves instead of the powder. 6 of the normalsized leaves can be used instead of 1 pack of powdered gelatine.

Also, if you’re getting into baking and the like, i’d suggest getting the flexible rubber utensils to get all the makakings out of the bowls and containers.

Just a random tip they used to use in the kitchen by my office, they put the coulis into plastic squeeze bottle to make plating easier.

Any time you’re trying to suspend an ingredient in a baked dessert like the lime zest (or fruit in cake) toss it in a bit of flour and fold it in toward the end before baking. That will help it keep from settling in the bottom. Love what you are doing here. Keep it up!!!

Can't do that with Panna Cotta. It's a delicate Italian custard and adding any amount of flour would potentially ruin it.

Personally I use a bigger line line zester. It makes it a bit easier. And sticking a knife in the gingerbread is alright. Another way is to lightly press on it. If it leaves an indent it's not done yet. It has to spring back.

you might try a four sided grater that stands up has a zester side its more stable, sounded really good, maybe try a different fruit, papaya, pomegranate, or other fruits. waiting to see when you get it to your liking and these are great videos. thanks for sharing

We have 2 four sided graters, but the zesters always suck. The one I have may be a pain in the butt, but it's considerably better as getting the zest.

Niel's when baking a cake or what your doing use a toothpick if the batter doesn't stick to it it's done. So can't burn it sounds good. I like chocolate fudge cake Or coconut cream pie, key lime pie them are good..

The lime juice will have curdled the cream. You could try using all coconut milk or just lime zest in the whipping cream. Keep it up and just try different variations. 😀

Funny thing is that it didn't curdle when I added it or cooled it. I don't thing that is what happened. I'll likely be trying Lime Panna Cotta again in the future, so we'll find out

@@LifewithNiels I totally respect your family privacy. I may not have been clear on what I meant. I think you do well on camera while cooking, the small miscues are actually entertaining. Maybe this isn't the right channel for it seeing you cook the final dish the way you are going to cook it for your family. But that would be cool to watch. (No family in the clip) I'd likely choose a dish or two to cook for my family, especially after you explain the pitfalls you went through to get to the final dish. Either way, here's to you and your family having a great meal.

Hi Niels! Yes, you made this baker cringe! My mom was a Home Ec teacher for 40 years so a few tips that she passed along to me - 1) a toothpick or knife inserted in the middle will tell if it's done (if it comes out clean), 2) use a spoon to pack brown sugar in & 3) use measuring cups for solids (ie the chocolate) and measuring glass for liquids (get down @ eye level to confirm). Hope this helped! For the gingerbread, maybe try a gingerbread cookie or is there a gingerbread crisp?Enjoying seeing your face again!

Could you have (large) grated the chocolate, instead of chopping? Seems delicious! Great job! It’s experimentation. I bought some organic Ceylon cinnamon and it smells and tastes so much better than grocery store cinnamon, I only mention it because I love cinnamon. Also, I’m moving next door 😂

Wet and Dry Measures are different, meaning 1 cup of liquid is different from 1 Cup of Sugar, you need to use different cups for measuring, But I am sure it is going to tasty

Hey Niel's, I've been following your work for a while now and have recently been going back through and re-watching a lot of your original content. I have to say I find your desire and new work on the channel truly inspiring. I had done something very similar myself. When I did something similar, I started with a fun and inventive cook book to help spark my desire to explore some awesome recipes I would have never tried before. Since I like you I consider myself an amateur chef, felt like this might be worth pursuing. The cookbook I started with was the Fallout game themed cookbook. It was fun since it combined two things I really enjoy. Just a thought to help keep those creative juices flowing. Looking forward to your next video on here!
