I couldn't help but notice the 3 "thumbs down" on your video but I did not see any critical comments. The the threshold of difference is where the potential of learning is greatest. I wish they would have expressed why they did not like this session as long as it was constructive. Personally, I appreciate that you showed what can typically go awry and how to remedy each scenario. Cheers to you!

There is a strong correlation between thumbs down and the quality of the video (the more useful info I put into the video, the more thumbs down I get, but also the more thumbs up). I started measuring how well I did by how many thumbs down I got :) What people don't like is often really funny (my accent, my dirty stove, math, salt, undercooked food, etc.) My poor 8 year old was nervous that someone won't like her video. I told that on the internet, someone will always not like you, but who cares (the same applies to life in general).

Love your sincere, helpful and fun ways to teach us. Thank you for another great video Helen! I was thinking of Crepes Suzette but didn't have any Grand Marnier or oranges handy. We wanted breakfast and stat! So I grabbed a half-used jar of lemon curd and made a sauce in the same small skillet as the crepes and oila! Poured the sauce over the stack of crepes, added a little creme fraiche on the side and served it up. Tasty breakfast!

Made this recipe several times and LOVE IT! For the orange sauce (separate video), I just tried using very finely diced KUMQUATS in lieu of orange zest today and I can't recommend it enough! Kumquats taste more like oranges than oranges, and the bright, tart orange flavor they add to the sauce is far more complex than the variable flavor of zest. TRY IT if you can find them!

I've been binge watching your channel for a few days now. Been on a water fast and had to wait until I could eat 'real' food again - and I start out with your crepes and 'burnt' caramel sauce! LOL But I have to let you know that THIS is the best crepe recipe that I have ever tried! Not that I've tried hundreds of them, but enough to know that they're not like the ones I've had in European Creperies (I live in the US). These are soft, supple and taste just right! I even used the gram measurements to cut the recipe in thirds since it's just me (and to only use 1 egg instead of halving the recipe and having to try 1.5 eggs [had to figure out 2/3 tsp of salt/sugar - found out to use a 'sort-of' heaping 1/4 tsp to get 1/3 tsp so I used two heaping 1/4 tsp of both DCK salt and sugar]) Came out beautiful! A new recipe added to my recipe 'book'! Thank you so much!

Great video and you are an amazing cook. Some of us are used to different tools. For me it's my baby smooth iron skillet and my fingers. Just as non stick and no chemicals other then iron and carbon! I also bring out my inner Julia Child and rub butter on the pan and the top of each one that hits the stack. Love your videos!

Can't wait for the next video! My Nonna would make me crepes when I was little. Then she taught me and we still do them together for breakfast when I come home from college! You have a wonderful lesson for making crepes! I had to figure out all of those tips and tricks on my own when I was young. Now I can make them with my eyes closed, almost!

you can certainly try, but I don't think that would work too well. crepes need to be hot to taste good. there is no such thing as a good cold crepe. while the fresh spring rolls are normally served chilled.

I have been flipping crepes and other types of pancakes just fine. But recently I switched to a large, heavy carbon steel pan. It browns beautifully and gives me much faster, more predictable and uniform results at the cost of it being too heavy to flip. So if you have flip anxiety you can just skip it and buy a carbon steel pan. Although I find flipping to be very useful ability for a bunch of other stuff. I can't imagine sauteing without flipping and even when I make liquid sauce sometimes I just don't bother mixing it with a spoon or spatula and just flip it couple of times to immediately go back to doing something else.

Tried it for the first time with a big 12 inch sauté pan a few weeks ago, heavy but they still turned out great! Then I bought a crêpe pan and it made it so much easier. Great video! Can you make one on how to make a soufflé? Especially a breakfast soufflé.

Where I come from (Denmark), this is what we call a pancake but I normally change 1/3 of the liquid with pilsner beer

+Dale S My gut tells me no cake flour. Crepe batter is so thin, it needs some structure. All-purpose works great. But if you want to try it with cake flour, let me know how it goes.

you can use a normal non-stick pan. you can need a crepe pan.

@@helenrennie than you, all I have is cast iron skillets can it be done on medium heat to afford a few seconds t swirl , using both hands( I'm thinking of 12" skillet, also zu real use flipping a crepe without a spachula would be near impossible in cast iron that suze :-) )
