I must say, these were absolutely delicious when I made them. I would suggest cooking them for about 3-3.5 minutes though for a crispier pickle. Perfect recipe though(However, they are quite addictive so make sure to make a lot!).

I haven't made these yet, but they look delicious! One thing that bothered me while watching the video; Deronda said you could either cook in small batches (her personal choice), or you could "put them all in at once" (which I would prefer, to save time). But my understanding of cooking with hot oil is you don't want to overwhelm the pot/skillet with too many items so that you don't lower the temperature of the oil too quickly. What are your thoughts on this particular issue?

Hi Jack...I like to work with small batches when frying in hot oil. Overcrowding or overwhelming the pot/skillet, with many items, will definitely drop your oil temperature. According to me...I would recommend...working with small batches! Bunches of thanks for your comment. ENJOY!! -Deronda :)

I use beer instead of sparkling water. Gives it a great taste and crunch!

Sparkling water in tempura batter will create a very light and extra crunchy coating after frying. -Deronda :)

..They look lovely, but I think another minute in the fry would make them look more golden color. They looked a bit "Raw" color. I will try this with some cayenne and paprika. Thank you

+Jo Anne Keryger Hey...Jo Anne!! Believe me, the color on these fried pickles are misleading when using a tempura batter!! They are absolutely delicious, crispy and just light in color!! The cayenne and paprika flavors will definitely add another level of flavor to these Fried Pickles!! ENJOY!! -Deronda :)

..Well girl, I gotta tell ya, I made them today like I said I would. Even though I added cayenne and paprika they came out delish!! My son came over after work and said, "what's this ma?"...OHHH fried pickles!!! Needless to say, he ate them all !! BTW, I left them in an extra minute or 2 and they still came out a light light golden color with the hint of spices color mixed in. I ended up putting the spices in the liquid. Thank you

why do you use sparkling water?

The effervescence adds lightness/air to the batter.
