This will prevent oil from spattering and pork from sticking and coloring unevenly. Turn heat on medium. When oil starts bubbling, turn heat low to medium low. When skin is translucent, (about 5 to 7 minutes total) remove pork, turn off flame. Pierce pork skin (a lot!). 2. Turn flame back on medium low, put pork back in skin down. After about 10 minutes or so you can turn the pork to cook on all sides, about 5 mins each side, then put skin side down again. Cook only until the skin starts to slightly bubble and the skin is no longer sticky and has a slight crisp shell to it. (see video). Do not cook it any longer or the skin will only harden, not crisp up. Remove pork. (cooking time 25 to 30 minutes total). Allow it to cool COMPLETELY. 3. Turn flame back on medium. This time, allow the oil to heat up (do not let oil smoke. This is too hot). When oil has heated, put cooled pork back in, skin down. Move pork around often in the pan, but keep the skin down until it begins to get golden brown. If you don't allow it to puff and brown enough, it will lose its crispness later. Once it gets golden brown and very bubbly in the skin, you can flip it and cook the other side until it has a nice colour also. About 10 minutes total. Remove from pan. Allow to cool before slicing. If you don't want to cook all of it, you can complete #2, and refrigerate/freeze pork. Defrost and allow it to get to room temperature before you start #3. Please correlate instructions with video. Hello, does this recipe work with whole slabs of pork belly or just strips?
