I discovered this gem of a man just 2 weeks ago while I was in bed being bored with a cold. Boy was I glad I was sick and looked for great videos. Even though I was sick I still found myself wanting to taste all his wonderful recipes. I binged watched and it is my go to video every day since. (I still have a lot of catch-up to do )This man is an all-round nothing less than a great entertainer!! He overseas the gardens, does all the shopping, cleaning , playing the piano, entertain friends and make the most delicious and easy breezy recipes which even the person with "2 left hands "can do 🤣 He s fabulous, and I love that somehow he gives me the feeling I am right there, shopping and tasting all his great cooking in the parlor or in the garden. What a gem!!

Shaking the potato cubes about after they're boiled, to create the mashed exterior, is something I never would have thought of. I will do so next time. I would have likely tossed them in Italian seasoning or Garlic Plus before roasting them, but I like the 'neutrality' of what you did....so they won't interfere with the main item on the plate. Excellent.

Kevin, I just want to tell you how thankful I am to you for this supper idea. I made the crispy taters and they turned out incredibly delicious. I'll never make them any other way! I made a fully loaded omelette with ground beef, onion, spinach, hot red pepper and spices. I also included a creamy spinach salad with frozen mixed vegetables. We loved this meal. So good!

I'm going back and revisiting some of your videos from a couple of years ago and had to compliment you. This one was in the depths of the worst of the pandemic yet you still were calm, and even brought your wonderfully gentle sense of humor to the video. I'm going to make this mouth watering recipe for tonight's supper - exactly what I was looking for (which means actually I look at your channel and website often for inspiration and am never, ever disappointed). One question for you, though. Do you have a recommendation for a really good omelet pan? Now that I have been "adopted" by three hens I have been gifted daily with the key ingredient! Thank you again for this and all your other great videos.

Perfect timing for me to watch this video! I found a recipe for a hash that has potatoes, peppers, onions and kielbasa sausage. I want to use Uncle John's Pride sausage, instead of kielbasa, as it has a really good flavor. I will be doing my potatoes in the same way that you are making them so they will be super crispy and delicious! Thank you so much!! Take care and be safe! 😊❤🥔❤🫑❤🧅❤

Once upon time, in the UK at least, baking soda was added to cook cabbage, etc. However, it became known that the soda stripped green veg. of vitamins and other nutrients. I would therefore be slightly dubious about adding to the potato water. I have always found parboiling and vigorous shaking adequate. Admittedly more calorific, about a centimetre of goose or duck fat melted and smoking hot in a roasting pan answers best as the potatoes brown almost instantly. One needs to turn and baste from time to time. Using Kevin's good, less fatty recipe, a tasty addition is to intersperse the potatoes with little sprigs of rosemary and slivers of garlic. I don't know if pheasant is commonly cooked in the US, there is not a great amount of flesh on them so you always need two (a brace); I do them with the herby potatoes, cut into about 3/4in. dice and all the traditional accompaniments, i.e., red cabbage cooked with apple, spice and onion (various recipes abound) or Brussels sprouts stirfried with bacon, fried breadcrumbs and watercress. Sometimes a spoonful of red currant jelly is added to the plate. Needless to say, this not an everyday meal. My parents, when they got older and had limited company would eat this on Christmas Eve and treat themselves on the day after (Boxing Day) to lunch at a nearby village hotel popular as a base for country sports, frequented by lively young people and with really excellent food. Please, dear Kevin, don't take my reservations about baking soda to heart; I'm not accusing you of ignoring nutritional values as it is obvious that you take them very seriously.

I watched this video @1hour ago and emptied what potatoes were in the refrigerator (sadly 7 small and a bunch of miniature ones.) And, rewatched the video as I was roasting the potatoes...they are now served and my mom had most of them. They came out great! They cooked faster than yours, also... due to smaller sizes probably. I shredded some cheeses and served them together. I had been craving some for a while but due to Covid couldn't get to them. Thanks again ☆☆☆
