Have you ever thought about making the cat ear beanies in the round? Instead of making the rows back-and-forth, you can just go round and round and That way you’ll have less end to weave in. You just make a Chain, connect it, and then do double crochet is normal and then you can carry the color up the rows instead of cutting them off and weaving them in.

and i get that it's a bit scary but i genuinely think it's just good that you switch your products up a bit (as now with necklaces) if that's what you wanna do. also i think that can help prevent getting burnt out on crochet (or at least minimize the burnout)
