With any leftover mashed potatoes you can make gnocchi. They’ll be exceptionally yummy with the garlic & parm that was used when making the potatoes. 1 cup mashed potatoes, I cup flour, 1 egg. Mix, but don’t over mix (think pancakes). Pull off a hunk, roll into a log on a floured surface and cut into bits. I recommend putting them on a baking sheet and freezing them. Dropping those delicate fresh bits into boiling water isn’t fun! Boil, in salted water, just until they float (I use a strainer spoon) and smother in your favorite (hopefully homemade;) sauce😋

Looks like a fun recipe!! Question - why scrub them before you peal them?
@AMindFullMom10 күн бұрын
You can simply wash them. As you peel the dirt from the peel can reach the interior of the potato.

I never peel potatoes....the peels have great flavor & nutrition. Not peeling saves time. This recipe sounds wonderful! 🥔
@AMindFullMomКүн бұрын
You're right, it definitely saves time and the peels are super nutrient dense. Mashed potatoes is typically the only recipe I remove the peel.

Absolutely! For best results, let the potatoes come to room temperature for 30 minutes first. Add them to the crockpot, and add in a bit more cream or milk to thin and then turn to low for 20-30 minutes. Give it a stir, and turn to warm to hold warm.

How many pounds of potatoes do I need for 14 people and do I double the liquid amounts
@AMindFullMom9 күн бұрын
Hi Kathryn! I recommend 1/2 pound of potatoes per person. So you will want to cook 7 pounds of potatoes. I would use 1-1/2 cups broth, a bit more salt, and 3 tablespoons of butter to cook. Finish with 1 cup of cream and 2/3 cup sour cream.
