Soup was wonderful I loved the idea of cooking the minestrone soup all day in slow cooker I like to cook my pasta separately ( I like the elbow macaroni) I put the macaroni in my bowl then pour the soup on top ….keeps the pasta from overcooking and absorbing the broth I also like to do a quick sautee of the onions,celery and garlic in skillet with olive oil before after adding to slow cooker…. This is a beautiful soup with all the different color vegetables Delicious!!!!

Yummy. I love soups and chili's when it's cold out. I thought about making soup today because we finally got Fall like weather and it rained all night and morning but going to wait a little bit. This soup looks so delicious. I'm definitely going to give it a try.

Vanessa ... you have my mouth watering, that minestrone looks so good, I'm definitely going to make some soon, an idea for the green beans if they are fresh, steam them for a few minutes beforehand so the cooking begins a bit before adding to the crockpot. Thank you for this recipe ... mine will have no noodles, but gosh darn I wish I had all of that on hand right now.

Love the soup.I make homemade Yugoslavian Soup but it does have short ribs in it plus celery with heads and carrots with heads a whole yellow onion and large can of Italian tomatoes and can of garlic tomato sauce and whole cloves of garlic.and Lawry's season all.pepper salt some fresh grown seasonings.white potatoes a soup bone with some cuttings .Cooks all day in a soup large pot. Remove meat veges onion garlic potatoes and put in casserole dish with lid.Put in shell small noodles and cook until done. Serve with fresh french bread to dip.Serve meat and veggies and potatoes and carrots on a plate. Ketchup to dip meat in mash the potatoes with butter .The Soup needs extra salt through out the day.

Minestrone...pronounced "minestrona". In Italian, the 'e' is pronounced like a long 'a'. Soup looks delish, Vanessa!! Thanks for sharing your Crocktober recipes. :-D
