Superb video. In the tv series Young Sheldon, Season 2 Episode 21: “A Broken Heart and A Crock Monster” the young kids were in a restaurant having dinner with their meemaw and her boyfriend. While reading the menu, her granddaughter Missy, asked what a “crock monster” (Croque Monsieur) was to which the boyfriend said it was a fancy ham and cheese sandwich. After she took a few bites Missy declared she was really liking the crock monster. Bet she definitely would have enjoyed your version of the crock monster.

Neal, I thought the Weber griddle insert for the Genesis was supposed to replace the grates. I see in this video you have it on top of the grates. If it will work that way, it should also work on the Summit series (the grates are larger - deeper). I had emailed Weber a while back to see if they were bringing out one for the Summit series and they said nope. So is the unit sitting on the grate performing any different that sitting on the lips where the grates mount?

Yes, I always put nutmeg in my béchamel. I didn’t know that you could make it without nutmeg. But, don’t use that pre-ground nutmeg life that. Nutmeg looses its flavor faster than almost any other spice. That jar will have no taste in about 2 months. Get whole nutmeg and grate it on a micro plane straight into the sauce.

Will do...thanks

I bought a Camp Chef 3 burner camp stove in December to use the All-American 941 41 quart pressure canner on it as it's big enough that if I used it on the stovetop, it would likely burn my countertop. Those burners are also really hot, so what I did was put a diffuser plate down on the burner before I set the canner on it to try and reign in those temps some to protect the expensive canner. I imagine the same thing would work on that Weber burner. I feel like the only person in the world who can't stand ham and cheese together. I like ham. I like cheese. I decidedly do not like ham and cheese.
