Any point you wish. My go to point is (0,0). But you can use it if the line passes through that point

To find where to shade, if the inequality is greater than, it would be above the line and if it is less than, it is below the line? If yes, do I still need to show the test in my working?

That is not always true. Because depending on how they write the inequality the shaded area could be different. I would suggest you always do the test to make sure.
