1 egg (without shell) 53 g
● Cake finished size (12cm * 5cm, 2 pieces)
● Moist and soft coconut sponge cake
(mold size: 12cm, 2pcs)
2 Yolk
17 g sugar (1 Tbsp + 1 tsp)
20 g coconut oil (1 Tbsp + 1 tsp)
23 g coconut milk (1 Tbsp + 2 tsp)
A pinch of salt
55 g cake flour (1/3 cup + 1 tsp)
7 g coconut powder (1 Tbsp + 1 tsp)
2 egg whites
40 g sugar (2 Tbsp + 1 tsp)
● Sweet Mango Cream
175 g mango puree (2/3 cup)
18 g sugar (1 Tbsp + 1 tsp)
5 g lemon juice (1 tsp)
4 g powdered gelatin (1/2 Tbsp)
20 g water (1 Tbsp + 1 tsp)
90 g heavy cream (60% whipped) (1/3 cup + 2 tsp)
● Mango Jelly
40 g water (2 Tbsp + 2 tsp)
Lemon juice (optional) 2g
10 g sugar (1/2 Tbsp + 1 tsp)
2 g powdered gelatin (1/2 tsp)
10 g water (2 tsp)
15 g mango puree (1 Tbsp)
Food coloring (optional)
● Coconut & Chocolate Cream
10g coconut powder 10g (1/2 Tbsp + 1 tsp)
90g heavy cream 90g (1/3 cup + 1 Tbsp + 1 tsp)
70 g coconut milk (1/3 cup)
16 g sugar (1 Tbsp + 1 tsp)
5 g powdered gelatin (1 tsp + 1/2 tsp)
25 g of water (1 Tbsp + 2 tsp)
70 g white chocolate (1/3 cup + 1 Tbsp)
Heavy Cream 200g (60% whipped) (3/4 cup + 1 Tbsp + 1 tsp, before whipping)
● Twinkle Mirror Glaze
50 g water (3 Tbsp + 1 tsp)
100 g sugar (1/2 cup)
100 g starch syrup (1/4 cup + 2 tsp)
(Or Glucose)
65 g sweetened condensed milk (4 Tbsp + 1 tsp)
7 g gelatin (1 Tbsp)
100 g white chocolate (2/3 cup)
Food coloring
● Coconut powder (about 40g) (1/4 cup)
50 g heavy cream (3 Tbsp + 1 tsp)
5 g sugar (1 tsp)
● Syrup
30 g water (2 Tbsp)
17 g sugar (1 Tbsp + 1 tsp)
3g passion fruit liqueur (1/2 tsp)

By weighing water and sugar
Melt the sugar in the microwave and...
Mix in the liqueur and cool to room temperature.
