No, sugar is not compulsory. After 2.5 to 3 hours in summer, keep an eye on the curd mixture. Once you see it's set immediately keep in refrigerator. Rest all is already explained by Nilu mam. You will definitely get naturally sweet curd. At first the curd doesn't seem hard enough, but once you'll keep it in fridge it will become hard in two hours.

Your instructions are not complete. 1) Why did you have to try and make the yogurt in the first example when you were sure it will not form. 2) In the second example you don’t tell us what was the white paste around the pot before pouring the milk. Was it yogurt starter or was something else.
