Thats the biggest Culantro leaves I have ever seen. We grow it in my yard here in Florida but the leaves are about 1/3 as long as those. Kingfish is great for so many recipe's. Us Cubans have a great recipe for it called escabeche with onions,peppers and vinegar that is also really good. Love this recipe and any curried fish.

Why do we have to coat the fish with flour? Does it not affect the original taste of the fish and its 1 hour marinated time ? :) Cant we just fry them straight from the marinated concoction to the hot oil pan..

In response to the question on frying. From my experience the actual frying holds the fish together. The flour also forms a light batter. Some cooks season the flour and soak the fish in an egg mixture then back into the flour before frying. This method seals in the flavour of the fish. I have also seen Large Steaks (Large fillets) of fish sliced and our favourite Caribbean Green seasonings stuffed in them before frying. When the fish is steamed in the gravy all of the wonderful Caribbean/West Indian flavours are preserved in the body of the fish. If the fish is not fried the stakes, fillets,can be easily separated and become loose making the presentation looks unappetizing. Also, when fish is steamed without frying, the fillets/steaks spring a lot of water sometimes making the gravy very watery. * I am not an expert, but I just love to eat a very tasty fish lunch or dinner.
