The Minecraft vanilla oak trees are quite boring if you look at them in a critical view. Here you can see how I like to build the different stages of custom-built oak trees.

I checked all of the different stages for all the different trees from the .nbt files that are uploaded and every single one of them worked just fine and the way they should... Maybe you show me what you typed into the structure block or something, but I don't think that I can really help otherwise. Thanks for notifying me, though!
