That's legit the whole purpose of us as animals. We hopefully make better choices, and pass down better genes. And in a few thousands years we get something a little slightly different, better and more adapted to the world around us. Humans are animals too, never forget this. The moment we separate ourselves from a very fundamental truth of reality, that we are apart of it, the very moment we lose sight of that evolution. We are evolving in a makeshift world that man has created, and it will kill us in future time because we can no longer adapt the reality of our world and existence.

The monkey may be appreciative, but it didn't do those gestures as a sign of appreciation. It was trained to do those gestures when receiving food. It doesn't recognize what those gestures actually mean.
