In Germany theres a raw meat dish called “Mett” To sum it up, it’s seasoned ground meat and you put that on bread or a Brottchen with raw onions on top and eat it. It’s so yummy!! :)

@JuiceBox I'd say either - Maultaschen (it's like big pasta squares filled with minced meat and some other stuff. Typically served by either themselves or in some chicken soup) - Königsberger Klopse (meatballs and potatoes in a caper sauce) - Or some variation of Rouladen (beef, covered by a layer of mustard and then rolled up around onions, and pickles) with Klöße (like...boiled potato balls. Kind of) and red cabbage. Those I could recommend right off the bat.

Hi, deer farmer here, another way to avoid cwd if you are super worried about it is to research the species you hunt beforehand, there is at least one species that I am aware of that has 0 recorded cases of wild cwd and has been unaffected in lab environments as of my last deep dive into the topic a few years ago and that is fallow deer. I appreciate you for helping spread knowledge about the subject instead of fear.

As a venison acquirer and enjoyer, I agree with all these points except the bit about how “unless you cook your meat to 2000 degrees it may as well be raw”. US meat is pretty well regulated specifically against prions since the British mad cow incident. Testing the meat is smart and even my family doesn’t go that far because don’t have too much CWD around here, we don’t eat the brain, and you can just *see* when a deer has CWD, it’s very fucked up and obvious. But all that aside, there’s absolutely more risk of getting a prion from wild deer than there is store bought meat products.

I’m confused, I thought the point he was making is that if there is CWD there’s no possibility of cooking it out of the meat. Is this incorrect?

​@Emika Neeran No, that's right, prions cannot be cooked out, even surgical rooms have to use disposable tools if they're working on someone with prions, the autoclave doesn't kill em.

I’ve always loved the idea of eating raw red meat, but grew up in a culture that definitely did not do that. I’m super excited to learn this is actually a thing, gonna go learn more about how to do it correctly now ❤

In germany we are eating raw eat to. Its named: mettbrötchen= mett= raw meat brötchen= buns. After 12 years eating im still alive. Of course only fresh meat.

I love Kibbeh! There’s a huge Lebanese community in the city where I grew up and it’s comfort food to me. We get it every time I come to town.

Dude I dont know much about the lebanese other than they have some of the best food I've ever eaten in my life. A lebanese place moved into an old sonic a block from my dads house and one day i walked over there to grab lunch and started going every day. 💀 so freaking good!!

My family is Syrian and kibbeh is the first dish all us girls were taught to cook. My grandma always said a good kibbeh had the power to win you a good husband.

Granddaughter of lebanese here.. and mine was not kibbeh, to form it to fry, yes, i learned before i reached 2 digits in age, but to actually cook was mjadra… now grandma is gone and so i my dad and the rest of the family, i gotta learn from the internet how to properly do a kibbeh! 🤦🏻‍♀️

If I'm not mistaken, prions can also take years before even showing signs of infection if ever You can be infected and die of natural cause never knowing you had it But I could be miss remembering lol

That looks awesome! I’ve done similar in the past. One thing I liked doing was where I ground up venison, mixed a lot of green onion and garlic and pepper in it and cold smoke it for a day.

i’m lebanese on one side of my family, i grew up seeing my grandma and dad make this dish and love it raw. it was strange to me the first time i saw cooked kibeh. this is the first time i’ve seen this dish anywhere online, thank you for sharing it! i love yalls content so much, thank you for all the effort on it

Growing up one of my best friends moms was Lebanese. She would usually only make kibbeh for special occasions but when she did I was always first in line. Other pluses were leaving her house with bag fulls of grape leafs (dolmas) some with meat and cabbage rolls. I’m glad she taught me how to make these things because restaurants and places like Sprouts/Whole Foods charge an arm and a leg for them. Super healthy and flavorful food.

Kibbeh naya…it’s my favorite dish. Though if she hasn’t had it made with lamb and served with extra virgin olive oil, make sure she gets it that way with onion, olive and pita before she swears it off. I grew up eating lamb kibbie and I love how you showed baking off the leftovers because that’s so similar to how my grandma did it. My family came to the US from Lebanon several generations back.

I’m vegan but, I respect that you honor the life that will help sustain you and use every single part. The elk herders in Russia honor and respect their herds. They eat the meat raw, It freezes as soon as they process it and they slice it frozen into a dish that goes on the table with the rest of their meal! Much different than a heap of uncared for unhealthy beef sitting in a grocery store for days, in a styrofoam dish!

Finally, someone who gets CWD right! Honestly, I don't hunt or even eat game often (would love to do both) but I am an ecologist and some days I am blue in the face from explaining cooking wild game doesn't prevent CWD transmission. Arguably, even if your deer had CWD and you ate it, the advice you ignored in doing so is out of an abundance of caution. You don't want to be patient zero. Not to say it's safe either. Deer with CWD take pretty poor care of themselves and their immune systems fail, so anything else you're worried about in a deer is going to be even more risky in a deer with CWD.

That's the biggest hurdle. Alot of families in my area would actually own sheep specifically raised for lamb used in kibbe. My neighbors were Lebanese growing up and I was so intrigued by the whole culture. My family raised me very open minded and encouraged to let me try anything.

Look, im from brazil, ok? So not the same things as america.. but when my family does kibbeh they buy beef minced from a trusted supermarket and freeze it. Than unfreeze it to go through the meat grinder… we are all pretty healthy - and also meat not frozen smells a bit.. after freezing it, taste better

i feel so ecstatic that there are other cultures that have a dish involving raw meat! In Hmong culture, we have a dish called laab (pronounced as Lah) which is raw beef/venison, bile, and spices. I love eating it but its too spicy for me. There is a version where its cooked but the meat is crushed up. Both versions are great!!

So the Hmong people are an ethinic minority that are from Southeastern Asia; places like Southern China, Laos, Thailand, and Vietnam were locations where we lived. We lived up in the mountains. We don't have a country of our own. During the Vietnam war, we helped the US during the war which resulted in Vietnam and Laos to commit genocide against the Hmong which resulted in us moving across the world.

If I may, as a south texas whitetail hunter, I make 2 “raw” dishes out of mine I think you should try. The first is a carpaccio which is seared at super high heat with the middle left raw and chilled. Covered with a lemon and caper vinegrette, it’s the bomb. The second is a regional delicacy called Parisa. As far as I can find online, it’s only really found in Medina country along highway 90 west of San Antonio. It’s essentially the result of Germans who “settled” the area and had steak tar tar, and Mexicans who lived here who decided it needed cheese, onions, jalepeños and lime juice. Eat it with saltines or tortilla chips and you won’t be sorry

The first time I tried kibbeh nayyeh was with my Syrian/Lebanese friend. He's mum had offered it but refused to tell me what was in it. To her amazement I continue eating it after she told me what was in it. It's a great dish. Some nice extra virgin olive on top and lemon tops it off

The rarer the meat, the more flavorful in my opinion. Unfortunately however the older I get, the less tolerant my stomach is to it. I have to cook to at least medium now.

Yeah bro. Do you know why? Because we’ve been cooking meat for 2 million years and it’s one of the reasons we’ve evolved so much. Infact we were literally eating berries and fruits. Until we started cooking food. Because that’s how it’s supposed to be. Because animals eat different things and certain foods can’t be digested properly/cause sickness

i have 6 half silblings and 3 of them are half lebanese (we have different dads), the oldest lived in lebanon for a while but when he lived with us he would made us baked kibbeh. it’s one of my favorite childhood dishes ❤️

That looks really good! Honestly the people who are squeamish about raw food are typically westerners. Nearly every ethic group has raw dishes that generations have eaten for centuries.

That’s so interesting, I see comments like that when I watch raw egg being consumed in Asian cultures. I think that as long as you know where food comes from, if you are comfortable eating it raw shouldn’t be a problem. Steak tartare is very common in America, same thing. People are always quick to judge without proper knowledge.

I have some Lebanese( and Irish) heritage, live in Canada and have never tried raw kibbi, but I have many relatives who love it. Middle Eastern food is so healthy and amazing.

in wisconson they have a regional food similar to this, sometimes called tiger meat or cannibal sandwiches. its raw meat on bread. i believe it was brought over from german immigrants

​@t. me Salmonella isn't something you worry about if you source the eggs properly. Countries like Japan consistently consume raw eggs, and therefore, the standards are quite high, and anyone from Japan will tell you not to worry about it when you are there.

Me and my family have alot of Lebanese heritage and our family tree is from there and we make this dish a few times a year as a celebration. Keep making it. If I had a suggestion for you (might make your lady like it more) add more bulgar wheat and put your grinder in the freezer over night before processing and in between every pass. The only people saying this is gross haven’t had the wonderful taste of it. Served with thing sliced white onion and a good slice of fresh bread… nothing beats it.

If it was an American who said it I would like to apologize on their behalf. You see we have this issue with people who are just genuinely dumb as rocks and super confident about it here. With a little research you can find out that about 7% of adult Americans actually believe that brown cows produce chocolate milk. That’s a not very insignificant number of grown adults who believe that. That is almost 1/10th of America.

Hey! Just a few comments about CWD. You are completely right that cooking does not inactivate CWD prions, but I would still be hesitant to consume raw venison if you live in an area where brain worm affects white-tailed deer and elk. The CDC also found that CWD can be contracted by macaques, a close genetic relative of humans, and that CWD can be contracted during the incubation period when the vector animal is asymptomatic. So keep testing your wild-caught venison :)

As a Syrian, it is genuinely SO mind-boggling to me how some people treat the same concepts of food differently depending on where it came from. If the food was served in a high end luxury restaurant where they chopped up raw streak and served it up, it's a "unique" dish. But if the food comes from an ethnically different place that deviates from their food, it's "caveman" food. The smell of ignorance coming off of those types of comments, yikes. I was going to add the part about prions but you seem to be well versed sir. I read an article that said this facility/university had to destroy a horse with a prion disease so they burned the whole animal with diesel fuel down to ashes, afterward they were still able to find prions present in the ashes. Weird things they are.

I grew up next door to a Lebanese family, who was more than generous when it came to food. I liked it baked or raw... still do 35 years later!

I love kibbeh. We had the raw version growing up always on Easter. It still is one of my favorite things. The cooked version is ok too.

i love this dish. my mom says her tata in syria would make it a lot. my moms does the same she just puts ground beef in a pan with oil and tomatoes and it’s great with pita bread !

In Belgium there is a dish called tartaar it's rawground beef with raw egg on top served with fries or bread.In Holland we actually have Filet Americain!! It's raw beef you eat with raw unions and bread.

I'm from Wisconsin and there's this tradition around wintertime called "cannibal Sandwiches" or "Tigers meat" which is roughly the same thing. Though we put it on toast led bread. It's pretty much the Same thing as "Mett" from Germany. Which I found in an earlier comment. Wisconsin has a huge amount of German ancestral influence so it doesn't surprise me

I'm sorry some ignorant folks are nasty, but am grateful you can safely consume a dish that is culturally meaningful to you. Also, thankfully, prion diseases don't commonly jump species and are usually found in the organs instead of the meat, its not like you're eating human organs. But also, many ethical hunters remove cwd deer on sight. Controlling population sizes helps too from what an old friend told me who hunts to feed her family most of the year. Please dont let ignorant people get under your skin.

Also, I would love to try kibbeh myself, but have issues with certain textures. Like I love the flavour of raw fish but the mouthfeel makes me gag uncontrollably 😒

I grew up on Kibbeh Nayeh, I never thought it was weird until I got older and had friends who were so grossed out by that and other Lebanese food my parents and grandparents made. I love seeing people try it and make it their own 😁

You can also add a bit of apple cider vinegar to the mixture. This helps kill some bacteria, and can put others in a coma like state until they pass out of your system. So I've been told.

Raw food is so good. There is a small Is group of people Wallonia (belgium) and in the Dutch regions which do either eat raw .such as a raw venison , horse or pork . Or with some spice such as quail egg and some and some other herbs and spices .it's is absolutely freaking delicious

As long as you get it tested and properly butcher it, it is safe to eat! mettbrotchen and steak tartare are popular raw meat dishes 👍🏻

I have found since starting to teach people how to process your own food, the ones who worry about all the things that can kill you, are the ones with no experience in producing/harvesting/rendering/cooking their own wild or grown food (that’s including growing up being exposed to these skills). Not that it’s a bad thing to be concerned about that, obviously you have to have good handling skills and know about those kinds of things, I just find it funny meeting people who didn’t grow up with these skills how worried they get with some stuff and I’m just so comfortable with it. I can’t relate to that fear they possess

This reminds me of something my mom cooked with ground beef where she cooks it with lime juice and mixes it with diced tomatoes, onion, cilantro, and avocado. It’s one of my favorite things she would cook growing up

We have lost so many deer to wasting disease. In fact, I have stopped enjoying venison, even though it was easy on the budget. Thanks for informing us that the meat can be tested for free. I did not know that!

in sweden this is pretty much what is known as råbiff which is basically that but usually with a raw egg yolk as garnish i think råbiff is mostly eaten here in northen sweden where there are deer/moose hunters

The big thing is, as long as you avoid contamination with any parts of the central nervous system, you should be fine when it comes to any prion disease. Testing is still very important for surveillance purposes and a smart choice, though.

Oh wow I learned something today. I thought prions would denature at normal "well done" cooking temperatures as they are proteins. I did not know that they can be so incredibly stable and almost impossible to denature with chemicals or heat (anything short of incineration). At first I thought you were talking out of your rear end, but I looked it up and stand corrected.

We process our own deer, and my husband always laughs, because he forgets every year that I do this…. When I’m slicing some of the meat off the bones for grind, if it’s thin, and tender, I don’t think twice, I just POP it into my mouth. My husband who doesn’t even eat vegetables raw, always ‘freaks’, then remembers that I do this( I’m Slavic, Ukrainian, Hungarian, German, Chech, ) so he calls me a ‘vampire’ Lol
