The variations of a monster sounds like what WotC did in the MtG 5e campaign book 'Guildmaster's Guide to Ravnica'. There are "horrors" you can build and I used it a LOT in my campaign. We just wrapped up deep into 20th level with lots of Epic Boons and those monsters worked great. I really hope that held on to the innovations in that book.

I'm a little surprised they didn't show any of the stat blocks in the monster manual reveal stream; seems like they'd want to show off the changes and how they expect them to work in practice, rather than speaking in relatively vague terms about what's new in the new book.
