Actually 🤓, since you can get cast iron skillets very Very hot, and they soak a lot of heat like a sponge and are very fast to release all of heat, if you preheat it really hot, like 350°C Celcius hot or more (don't go overboard, while cast iron could handle up to 800°C Celcius, your ceramic stove top might not, and going over 350°C Celcius may burn and destroy any non-stick seasoning you made on the skillet, also use these IR surface temperature meters, or magic spell of temperature checking), you can make the crust necessary for sourdough neapolitan pizza. After about 3-6 minutes with the skillet's lid on top, you check if the bottom crust is ok, has these darkened spots and is to your liking, and if the top is not too raw baked (otherwise you can flip the undecorated pizza and bake the top very shortly). After decorating the pizza, you then transfer the cast iron skillet with the pizza right under the preheated broiler (basically the heat elements being red piping hot and heat radiating stuff like the living hell) in your convection oven to finish the top and the toppings. Of course, negative to this is your oven would need to fit the skillet of your choice of size. So, Dagoth Ur has no idea what he's talking about, cast iron skillets are great for pizza, those precedences he made over those failures of garbage tier pizza dispensers clearly made him miss out on some good stuff, if only he opened the heart to making his own pizza's (⁠~⁠‾⁠▿⁠‾⁠)⁠~. Speaking of his heart... since he's literally in a volcano, and he's a god, he has no need for all these modern age theatrics, he's inside a hot oven, can make a giant godlike Dagoth Ur worthy volcano and heart powered ceramic stovetop, make it max 450°C for a giant 45" perfect sourdough neapolitan pizza under 1-3 minutes.

I am not from NY. I am not from Chicago. I agree with literally every word of this rant. I went to Chicago once on a school trip and one of the stops for the busses was a Chicago style pizza joint. I thought it was undercooked because the crust was gummy and gritty from the amount of corn meal on the outside, and the sauce on top was cold. I seriously thought the staff was just trying to cover for the fact that they fucked up trying to cook a meal large enough for 70 high schoolers and their accompanying chaperones. I did not learn until years later that the sauce on top was not only intentional, it was intentionally cold. I later worked in a pizza joint and have easily made over 10k pizzas in the 4+ years I was there. I can say this as a subject matter expert on most things pizza: Chicago style pizza is not fucking pizza.

Corn bread crust (get it buttered so it’s extra crispy), cheese, and then tomato sauce (obviously cooked with garlic, onions, pork bones, and olive oil like any proper sauce). And no clue what this dipshit is ranting about, the sauce isn’t supposed to be intentionally cold, maybe it is at Giordano’s which is a notoriously soupy mess for tourists but no way in hell we ever did that when I worked for Lou Malnati’s, and Pequods in the city doesn’t do that either. Besides, as any real Chicagoan will say, deep dish is a once every month or two thing at most. Tavern style thin crust is the way to go 90% of the time, cut in squares.
