Love this! I have grown up eating this and make this frequently as well. We call it "dahi-baigana" which literally means dahi waale baingan 😅 I am from Odisha (India) and in our house, this is a very commonly made and well-enjoyed dish. It is made for regular lunches as well as special occasion meals. I love this dish! However, this is never the main entree dish, rather a side dish (like a raita). Also, we usually cut the eggplant lengthwise (thick juliennes) although I'm now inspired by your video to make this into roundels. Thank you for sharing awesome recipes as always, but this one touched my heart specially.

This dish I have been making since 10 years but one thing is different when we cut brinjal we put direct red chilli powder salt dry coriander powder and turmeric and put aside for 1 hour this will not make them black and then we shallow fry believe me you will like this way and the rest of the recipe is same serve with yougurt

Turkish and Middle East countries use a lot of baigan (egg plant) in their cooking and it comes out great. Egg plant with lamb , a lot of recipes use this vegetable.

Unbelievable delicious recipe! Afzaal does it again! I’ve never had this dish as my grandmother from Italy always had a tomato sauce or olive oil, lemon sauce on it. In US we don’t have this and this is the first time I’ve heard of it. Amazing taste and its healthy as I baked the eggplant slices in the oven vs. frying them. Thanks again for another 5 star recipe!

Wonderful recipe. Egg plants are eaten in Middle East countries too. Pl try sometimes those countries spices too to give a twist. Continue making vegetable recipes and add Arabic, Jordanian, Lebanese flavours.

This dish original name is "bou-rani" it's a bihari dish & you did one mistake in cooking. 🍆 slices grilled but not without coating spices (red chilli powder, turmeric powder, zeera powder , & salt ) & also make holes in 🍆 slice using fork (b4 coating spices)... Once done with grilling, used same pan & make tarka ... Pour yogurt in bowl , set 🍆 slices on top.of it & then pour TARKA (one more thing tomato must be chopped but not sliced)
