I also love cinnamon, so when I saw this at a local shop I knew I had to bring it home. I enjoyed it as much you did and definitely found it unique and interesting. As much as I enjoyed it though, it didnt work as a daily coffee for me. I just found it to be too much when I had it multiple days in a row. I liked it much better when I only had it 2-3 times per week.

That's the thing about this one, it's more of a treat/dessert than something you could drink every day. Feel like it has become even more popular with time as well and has become almost their signature coffee in the way Letty Bermudez was with Manhattan. Appreciate the feedback 🙂

Manhattan Luna Gesha is easily one of the best coffees I’ve brewed but I really am turned of by El Paraiso’s level of transparency. I wouldn’t hesitate to pay the same amounts as I am now even knowing they are infused but I understand they’re trying to avoid the ire of the process snobs. That being said, how are you finding this coffee compared to the Luna? High praise coming from you on this one! Also, got to try CC, Karimikui, Ghalib, then Lod Rodriguez (espresso roast), I believe CC may be back. Even the espresso roast in a cupping had no defects or roastiness. The Karimikui had a slight tomato note but it turned citric on a longer steep and settled into something like a Chinese kumquat note. The Ghalib is probably the first yemen coffee I enjoyed, clean for a natural and blackberry forward. Maybe it’s a good time to pick up Takesi gesha once again.

It's often hard to explain why, but there's just a feeling about Milky Cake vs Letty/Luna as this one just seems a little *too* unnatural. Letty and Luna both had that wild/vibrant profile, but they still somewhat fell into the realm of, "it could be possible for coffee to taste like this....." Milky Cake just seems almost *too perfect* from the way it replicates a flavor profile. As far as they go, this one is more of a one-note guilty pleasure where Luna has a bit more depth. We'll just have to see what comes of all of this when it is revealed one way or another. As far as Coffee Collective, they are likely due. Really did enjoy that Takesi and it's been so long since we had it. There are pros and cons to them cycling through the same coffees year after year including our reluctance to re-review the same coffee. They'll definitely be back at some point regardless.

Thanks for the review, for me it didnt taste like a "normal" washed coffee. There is definitely something going on. I read (but cant find source) that it's "cardamom washed", so basically left in a tank with cardamom. I wish they were more open about it.

The only reference I find is when searching for DAK dizzy lime, it officially says "cardamom washed".

Of course and glad to know it's not just me that finds something a little unusual about this one. Diego's coffees in general have been very different for a long time, and he's admitted to doing some infused coffees as well. As mentioned in the video, don't care either way, just want to know

check out the barista Hustle article titled "deconstructed fermentation", though I'd certainly be not surprised if diego added extra stuff to this coffee in addition to his usual bioreactor stuff

@@Oliccinoa lot of their process descriptions are ominous like it’ll say washed then when you read the description it’ll be a carbonic maceration or something. Don’t think I look at it in an accusatory manner just a nature of the industry at this point more than anything.

I can’t say I generally enjoy spice elements in my coffee, but this one sounded so intense that it interests me. If it pops up at a cafe I may have to grab it.

This one is just a bit different from the others because it's so clear and blatant. Rarely do coffees act this way. At least worth one try if you can

Thanks for the kind words.....but there aren't many coffees out there like this one yet 😅 Some of the Bermudez line of coffees including Letty Bermudez and Luna Bermudez do share the similar wild intensity while still offering a very structured profile

Listening back, it sounds like we found the best results at 16:1 at 99°C/210°F with the chemex. Coffea Circulor's exact pour recipe is you need more specifics

Interesting. I liked this one just fine but once was enough for me. Not one of my favorite Dak’s. I got cardamom (Morning Buns 4E), griddled coffee cake.

Another infused coffee. The producers and roasters are not open about this fact. More and more coffees are clearly infused.

This one specifically just felt a little too perfect in a way to be a standard coffee. Don't know for sure, not making any accusations, it's just different
