Dalgona is a popular Korean street candy similar to toffee or honeycomb but its Iced Coffee version is what has been trending across social media platforms.
But we understand that not everyone is fond of coffee. So here's dalgona recipe for matcha lovers! While this recipe might be a little complicated, it’s definitely worth the effort! You’ll just need matcha powder, egg whites, water and sugar! 😊

This looks so good! I have to try. Btw y'all, raw eggs are 100% safe to eat as long as they are fresh, and surprisingly very gentle on the stomach. You think your bartender is cooking your eggwhites when he makes that eggwhite foam on top of that cocktail of yours? No lol. I've googled and researched this because I wanted a natural source of protein to add to my smoothies-and yes! You can add them into your smoothies raw and it's completely safe as long as they're fresh. I know it sounds gross but you really don't taste it, and for someone who has a real sensitive stomach, I was absolutely fine. Also, alcoholic cocktails with egg white foam are delicious btw-it makes the drink real smooth. There are also meals in Asian cuisine where a raw egg is cracked over a hot bowl of rice and mixed in-look it up! There's a Japanese meal called tamago kake gohan. All drool 🤤

Btw, there's a procedure here that you will pour hot sugar syrup into egg whites just to make sure that egg whites are safe to eat. ☺️

Raw eggs are safe to eat when they have been pasteurized not because they are fresh

If someone has an egg intolerance, raw eggs could be worse than cooked Also, I've heard that salmonella from eggs comes from the outside of the shells, rather than the inside, but I'm not sure. If that is true, that means it should be safe so long as you're very careful

1/2 c sugar.. 1/2 c water. Simmer for 3-4 mins. 2 egg whites. Beat til fluffy. Put the syrup on the egg white mixture while stirring. Add 3 tsp matcha powder on the egg mixture. Add the match froth mixture on iced cold milk ☺️. Writing this out so I can screenshot the ingredients and steps lol. Thank you for the recipe!!

For those who are vegan or do not eat eggs , you can use AQUAFABA (chickpea brine) to substitute the egg whites.

Booklover 7 to me “ yes”, because not 100% cooked. She only cooked sugar and water until dissolve, not double bath neither. Can said 1/2 raw, 1/2 cooked.., that why so fluffy I pass... I don’t want to drink not 100 💯 % cooked eggs 😂

Hi, if you don't want to use meringue. You can still make this using coffee mate or any coffee creamer, using 1:1:1 ratio of hot water, sugar, and creamer. Then, just add matcha powder if you want.

Sadly, it doesnt turn out as great as coffee. The merigues arent smooth and cannot last for long time in fridge, anyway this is the best way for dalgona matcha lovers 🙄

this looks sooooo good! i tried making this yesterday on my own but i didn’t realize that green tea and coffee don’t whip the same. my matcha was too dense because i didn’t add egg whites it went to the bottom. thank you for sharing!! lifesaver🙌🏽🙌🏽

Just made it! It was so good! My syrup took a little longer to reach a similar viscosity to yours, about ten for mine :) I don't have a lot of experience making Italian meringues, if I reduce the syrup so it is less sweet, will the egg whites not cook?

Hello, you can reduce the sugar and add a little water then do the same procedure, make sure the sugar syrup is hot when pouring to whipped egg whites to cook it 😊 I really love this matcha froth 😍😍

Try plant based milk and look up Aquafaba meringue. Aquafaba is chickpea(garbanzo) water from the can. It’s vegan and won’t upset your stomach

Great recipe, I recommend for anyone like me who wants it to be mildly sweet, just use 1-2 tbsp of sugar and 1/4 cup of water. For 2 servings we actually only needed 1 egg white.

You can always pasteurize the eggs before hand if you're worried. Its easy to do at home

Egg whites must reach a temperature of 130’F for pasteurization. I’m pretty sure a little hot syrup doesn’t do that.

Before finding out this video i tried to make my matcha dalgona by replace coffee with matcha powder. And yeah it was fail *cry out loud*. And does the egg whites have to be at room temperature?

I've done that too 😂 yes, the egg whites should be in room temperature, add the hot sugar syrup to cook the egg whites while whisking

i’d assume you’d get similar results using a french meringue rather than an italian meringue (as used in the video)... right? lol

Its almost similar, but french meringue is usually used for baked meringue cookies 😊

french meringue isn't really safe to eat uncooked, so italian meringue would be a safer choice as it cooks the eggs while incorporating the hot syrup, i think it would also work well with swiss meringue which is literally cooking the egg whites with sugar on a double boiler to like 60 degrees and then whipping them

If you're ok with eating raw egg, French meringue is also good I think. Maybe you need to be more careful with overwhisking.

Nake sure to reduce your sugar syrup, it should be thick before adding it to your " soft peak" egg whites 😉

I’m pretty sure that the regular coffee one has egg whites in it too because I used every fancy blender you could think of and mixer in the coffee crystals did not fluff

Hello, with the dalgona coffee, you don't need the egg whites, it will just whip up an fluff if you really follow the same ingredients and procedure 😊

It’s only freeze dried coffee, sugar and water. 1 to 1 measuring with an electric whisk it should take no longer than 7mins, if that. It won’t work unless the coffee is freeze dried like a Nescafé

I wish I made this instead of the original version. I ended up making and posting on my channel a spiked milk punch floating the coffee on top. Came out really good too. The Matcha would have been amazing to try instead

you can also use thick coconut cream or coconut milk and beat it and mix that with matcha to achieve a similar meringue texture!!! If you’re vegan or have a sensitive stomach to raw eggs ^W^

It will taste a bit different, You can brew the green tea and pour it on the sugar to make green tea sugar syrup, then you'll add it to egg whites 😊

Yes you can brew it first with hot water, then use that green tea water to simmer the sugar 😊💚

i’ve tried it, didn’t work! i’ve read that it’s because of the oil in the coffee. since matcha does not have the oil that allow for the stiff peaks, it won’t work :(

I have a lot of matcha powder and no instant coffee so I'd love to try this out. I wonder how many servings is in your recipe because 2 cups of sugar is a lot. Can I replace it with monkfruit (luohanguo in Chinese)?

Hi, the recipe calls for 1/2 cup white sugar not 2 cups, this serves 5-6 cups. You can replace the sugar with low calorie sweetener or reduce the recipe by half 😊😊😊

Hello!You made a huge portion, was it okay to refrigerate it? My coffee dalgona was good with its taste for about a week, I am not sure if matcha dalgona would hold up

Yeah, we're 5 here at home so I made about 5-6 servings 😁 you can cut the recipe into half. I will not suggest to store whipped matcha meringue as it turns luquidy after an hour or so. If you want to store it, make sure to add cream of tartar into the egg whites to stabilize it for longer hours 💚
