Matcha(green tea) Tigre Cake Recipe, with Milk Chocolate

Hello! Today's dessert is Matcha Tigre.
Tigre is a mini-cake with a tiger pattern.
It's a sweeter dessert with ganache.
I coated half of the dough with coarse sugar! The texture of chewing sugar is very attractive.

40g fresh cream
tigre batter
210g butter
180g egg white
135g sugar
20g honey
75g cake flour
84g almond powder
9g matcha(green tea) powder
75g milk chocolate

반죽에 섞을때 버터를 방치해서 넣고 팬닝하니 되직한 상태가 되던데요ㅠ 이 상태로도 그냥 굽긴 했으나 묽지 않은 상태랑 큰 차이가 있을까요
