I occasionally have goose breast, seems like this would work fin, but it would take quite a bit longer. Great video as long as you don't watch it when you are hungry.

nice tip the follower. Never saw that before. Got most of the herbs in my back garden plus red cedar berries. Duck breast cr for a few days right now.

Did this once with Canada goose. Came out phenomenal. Took two and a half months for firmness I like. Didn't have collagen wraps so cheese clothed and wrapped with paper grocery bag and tied.
