I used to clean at a bakery when I was a teen. The baker and his wife would constantly be arguing. Most bakers have a certain sort of personality. It takes a strong will to go to work at 2 am in the morning and start baking. It isn't a job for everyone but I'm glad there's someone doing it and providing fresh pastries and bread each morning.

Good Danish pastry is not so much about the quality of the ingredients but much more about the skill of the baker, the recipes, and how the baker forms and bakes his pastry. This is evident from how different the test samples are.

The thing about local type bakeries today is that some are particularly good at specific products such as bread while others make better pastry than bread etc. When Danes move to a new area, they will usually shop around at the various bakeries in the area and then settle on a specific bakery unless there are to or three bakeries in the neighborhood where one of them makes particularly good bread and another makes particularly good pastry etc. Many Danes are pretty picky about bread, pastry and cakes. I mean, most people cannot afford to go to La Glace every time they feel the need for a piece of opulent cake.

You should make a Danish cake guide going through the quintessential Danish cakes which I think most Danes agree are the following: Kanelsnegel, Spandauer, Træstamme, Romkugle, Kajkage, Hindbærsnitte, Jordbærtærte, Kransekage, Napoleonshat. These are popular choices you can find in all Danish bakeries.

For food, i love Denmark. From the Pastries, Chocolade, Fish, Ice, i love it. But most of all i love the people, nature and the country (way of living/culture). Greetings from The Netherlands

Wow, Erin, I am so incredibly impressed by your Danish pronunciation. It has really improved a lot since a year ago - you must have practiced a tonne to get all those little phonetic details right! Also, I love this subject, baked goods are the best! 😜 my favourites are: spandauer, fransk vaffel, nøddemazarin

While it is true the pastry originated in Vienna, it has since it’s introduction to danish bakeries been further developed, refined and perfected into the multiple products we can buy and eat today. This was a true mouthwatering video from you, Erin. Might take a stroll by a bakery later today. Get something for the afternoon coffee. 🤤😂 EDIT: Imo … although bakeries are getting fewer and further apart, it is ALWAYS better to go out of your way to get your pastry from a local baker than from a chain or supermarket. A bit more expensive but faaaaar better quality of food experience.

@D Anemon No, it was soldiers in the Schleswig War, who in 1850 brought the recipe for a kind of "tebirkes" from a bakery in Kipfel in Vienna to a Danish bakery in Copenhagen and asked him to make something similar because it was part of their food supply. The baker in Copenhagen later used the same dough to develop other forms that became Danish pastry. Other bakeries in Copenhagen recognized that the baker's pastry was a success and developed their own variants of Danish pastry. I know the story on wikipedia is something like what you write, but on many more credible history sites the story is about the soldiers.

dont forget that in Austria, they call it Kopenhagener Plunder... "In Vienna, the Danish pastry is called Kopenhagener Plunder, referring to Copenhagen" so we gave each other ideas, to make both of our pastries better...

sorry to burst your bubble Erin lagkagehuset is not a bakery, its a concept bakery like mc donald you can get the same cake in Skagen as in København, for they are all made in one bakery and driven out to all lakagehuset sale places at night , bread ics made in 2 bakerys in denmark and driven out, as it is now its only bakeoff , so surport your local baker insted of bakeoff

"Lagkagehuset" is OK, but super expensive. Now all there stuff is made at there Centralized bakery and brought to there shops (so there actually not a bakery, just a baker shop🙄). Back in the "day", each shop backed everything - in house! Today there basically just an overpriced Supermarket Bakery! I only use places like that, if I'm in a hurry, and need😀 some bread. Otherwise I'll always go to a "Mom & Pop" bakery, since I know, it's made in-house, and they do there best 😀 ! However there's ONE exception. I get my "Croissants" at 7-Eleven. From what I've tried in CPH, there the best 👍 !

Wow! Nice and informative video. Cardamom buns are a recent trend in Copenhagen. I think it sort of got popularised when Juno Bakery started and made Cardamom Buns as their key bake. As you rightly said, many of these fancy bakers come from Noma. We had to stand in a long queue in the initial days of Juno bakery. Cardamom Buns have become more ubiquitous over time.

@@ErininCopenhagen poor guy, it's a great flavor! "Roasted hazelnut coldbrew with espresso cold foam" is a current feature at Tim Hortons right now. Kinda wordy for an iced coffee in my opinion.
