Thats a truly great sculpture! My question is, can you rig these kind of sculpture or they have too many polygons?

You can rig anything, but less polygons = less time consuming. You can always do a retopo to turn it into a lower poly model so the rigging is easier and bake all those sweet sweet sculpted details into the textures (even using displacement maps if you need them). I guess what he made in this video is the best approach for static pieces meant for renders: just roughly rig it, pose it, and then just continue sculpting it. For models meant for real time uses you would need a cleaner lower poly model as I mentioned.
