My grandfather was from a small villiage in Kowloon China. When I was a kid he had a restaurant in Regina Saskatchewan called Kowloons. He had the best wonton soup. I spent alot of my childhood hanging around in the restaurant. He sold the restaurant when I was 17 and actually sold the new owners his wonton soup recipe! Went there years later to try the soup. Not even close to what my grandpas was like. I miss the restaurant and my grandparents who have now passed on!

Great to hear aboutr your grandpa and his wonton soup. Running a restaurant in those days were hard times but also a great part of Chinese Canadian history of which you can always be proud of. Thanks for sharing a little of your family history and thanks for checking out my video.

I tried your Beef Rice Noodle recipe and it turned out well! Thanks! Pretty close to restaurant style but a lot less greasy. I found inside round sandwich steaks at the supermarket, thinly sliced at 1/4 in to 1/8 in thickness, was nice and tender.

Delicious dim sum served in generous portions and spring rolls as well. Excellent beef chow fun recipe. Have never had beef fun. Only vegetable chow fun. Looks really good.

Great video! That's dim sum with good value for your money! I'll have to try your beef noodle recipe, a couple of times I made it, the noodles fell apart, so probably from overcooking the noodles!

Overcooking could be one of the reasons. The owner at Noodle Arts Restaurant in Vancouver told me it was a really short cooking for noodles at her restaurant. Anothrr thing you could do is add an egg to your flour. The egg acts as a binder to hold the noodles together. Thanks for checking out my video. Wishing you all the best in your Chinese cooking adventures.

I am definitely looking 👀 and salivating.😋 Did most Chinese kitchens downsize their wok? Thanks for yet another restaurant review. Your channel is an excellent source of information for visitors craving traditional Chinese cuisine in the GVRD.👍 You can never go wrong with beef ho fun, the gon chow style! As for the homeless crisis, same where I am. It is sad how we have regressed to third world conditions as a nation.😢 No easy solution. Maybe leave the City to the burbs but would lose the amenities...

I have been in a few Chinese restaurant kitchens to video and it seems like most of them have gone to the small wok system. With the old large woks, the cooks used the spatula and ladle cooking method. It's the method I use in my cooking videos. Cooking with the newer small wok is faster because you can pick up the wok and toss the food around. The homeless problem we have now is what many west coast U.S. have already experienced in the past few years. Instead of solving the homeless situation, which also includes drug addiction, poverty, mental health and other issues, the problem is being pushed out into other cities and towns. The worst is yet to come. Thanks for commenting. Thanks for checking out my video.

Dan, what is your theory on why restaurants do not cook on large woks anymore? I miss the days of Foo's and Ho Ho Chop Suey that had lot of wok hei.

Mainly the cost of installing the large wok units was quite expensive. My grandfather's and my dad's restaurants had the large woks. The large woks needed higher amounts of propane to cook. Also the cooking area where the woks were housed needed more space. Where they used to have a 2 wok set up, they can build a 4 wok set- up now. You're definitely right about the old restaurants with the great wok hei. Foo's, which later became the Foo's Ho Ho, closed for renovations in 2014. It was was supposed to be reopened but I'm still waiting almost 10 years later. It has been going through extensive renovation and upgrades but I hope they don't replace theirr big woks with the new smaller ones. Thanks for commenting. If you come across any Chinese restaurants with great wok hei, please let me know. Thanks for checking out my video.

Some professional chefs without gas powered woks developed "torch hei". They fry the rice or noodles, then spread it on a baking sheet and torch the rice or noodles several times with a creme brulee propane torch. Then back to the wok for a little more frying. Probably too dangerous in a home kitchen! You could take your fried rice or noodles out to the lawn to torch it!

Hi, I just always wonder where the best "Chow Meins" are in Vancouver. 2) hmm East Hastings, might have to order food and take it out and eat in car, cuz want car to be safe

The food is good but the environment often is not. I've never had my car stolen in these areas but one time the hood ornament on my Mercedes was stolen even though I parked right in front of the restaurant. That was during the time when when hood ornaments were popular jewelry items with the kids. Thanks for checking out my video.
