This is true, but I've only seen the first stomach (Pansen) and never the third (Bälttermagen). I wonder if there is a difference in taste and texture.

Thorralf83 Tripe actually is a generic term for all chambers of the cows stomach used in the kitchen. The chambers have different names of course, same as in German. But I just had to look them up on the internet (wikipedia) as I am not familiar with those. The first (Pansen) is called blanket/flat/smooth tripe, while the third (Blättermagen) is called book/bible/leaf tripe. The reason I noticed the difference between smooth tripe and leaf tripe was just because I am curious in general and the latter isn't quite common in German stores. Greetings from Cologne. German: Tripe wird allgemein als Oberbegriff für Kumagen benutzt, egal welcher. Die einzelnen Mägen haben unterschiedliche Namen, genau wie im deutschen. Aber ich musste jetzt nachschauen (Wikipedia), weil ich mit den Namen nicht vertraut war. Ich bin deshalb aufmerksam geworden, weil ich generell neugierig bin und in deutschen Läden bisher nur Pansen gesehen hatte. Grüße aus Kölle. ;)

This looks amazing! I'll definitely have to try this recipe. Unfortunately at restaurants, they often don't rinse the tripe well enough. Nothing will ruin tripe faster than a bad wash. I almost gave up on trying tripe after my first experience because it smelled awful.

Appreciate your video. I asked around how to cook it but no one could tell me until now. I didn’t know if I need to clean the tripe or not from Chinese markets. Now I know it is necessary. Have you tried boiling in steam pressure? How long?

Glad I could help! I haven't tried steaming or boiling the tripe in my Instant Pot yet. It would take 1/4 of the time to cook in the Instant Pot. For example, 1 hour cooking time in a regular pot, would take about 15 minutes in an Instant Pot. Thanks for viewing my video on Chinese Beef Tripe.

My stomach is always happy when I eat beef tripe. LOL!!! But for real though, I love all offals with tripe being my favourite. Also, the best way of cooking it is in the Chinese styles with ginger, onion and garlic being the base flavours. Always yummy.

IS there a need to boil it for 45mins-2 hours? Is it to remove the smell ? I do hate the slight smell of beef Omasum .

Boiling the tripe helps remove the smell. As well, boiling the tripe will help tenderize it. However, some supermarkets and shops sell the tripe that has already been been cleaned and boiled, so it may not need as much boiling. In the old days, grass and dirt is still on the tripe when you buy it. Thanks for checking out my video.

I'm sorry about your results. I didn't mention the temperature setting in the video or in the description. I have added the changes in the description. If you turned on the heat setting to high, you may need to add more water. Also if the size of the tripe is larger, it may require more water. Mmmmm...... Sooo good. We make this as well, but we eat it either hot or cold and we add a little bit of fish sauce and lemon juice to it❣️ 😋💯 It's delish like that!!!

I tried but my tripe came out soggy. I only boiled it for about 20min as last time I boiled it for 45min and it was so soft it was falling apart. Any advice?

I'm sure you will make it delicious next time. I remember when a lot of stores sold it uncleaned, with grass still inside it. The main thing I find hard is cleaning the tripe. That's exactly what I wanted to comment. I agree with you 45 minutes it will become soft tofu, no taste. When I cook I only boil it around 8 minute,nax 10 mins for the size like this one about a pound.
