I think it's mostly the huge dmg/hp up talents what people are interested in for beefcake. Don't know how he does on kappa but surge immune for now is mostly a bonus which could become more important in the future if surge becomes more common/we get more counters for surge.

But kid tappa's barrier usually breaks very fast, how buffed are they in that stage?

Barrier hp doesn't change with magnification. Kid tappa's barrier always needs a hit of 15k dmg or higher to break or barrier breaker. If you don't have a unit with 15k or higher attack power/a unit with barrier breaker the barrier won't break unless you got breaker blast equiped.
