I think its cause there's so many builds you can do easily in DS2 compared to the other 2. Not to mention the amount of bosses which allows for more killing.

Other people: parry bosses with parry daggers/curved swords/small shields. Chad Ray: parries with a hilt parry on a katana, like a chad. Never used that thing myself, parry window on that thing seems so tight.

I used to parry things with a Greatsword. It's not worth figuring out as you can use a tiny shield instead.

I miss being able to parry with every weapon. The weapon art system in Dark Souls 3 is nice, but landing a parry with a Greatsword (the UGS, not the weapon class) was hilarious.

From what I've seen in the video, he used: •Sunlight Blade •Sacred Oath •Ring of Blades •Third Dragon Ring •Flynn's Ring •Red Tearstone Ring The weapon might be a Mundane infused Chaos Blade or Blacksteel Katana/Uchigatana, since he's level 838.
