Perfect!! Great job. It looks just like the Jay Fai version. She just needs the goggles, beanie, camo shirt, and red lipstick. I'm going to try to make it like a regular French-style omelet. I definitely prefer the butter over the oil. Butter and crab meat go well together.

I’ve been a bit lax in keeping up with your videos (sorry), and this is the first I’ve watched in a while. Compared with some of your older videos, I’ve noticed Aom has become more comfortable in front of the camera. In your older videos, she was a bit shy, but now it seems her confidence has grown and she smiles and talks to the camera more. Well done, Aom. Your English is very good and your food looks “aroy mak”, I’ll have to catch up on some of the videos. Keep up the good work.

I think that is the most interesting looking omelet I've ever seen. She's really knocking it out off the park with the recipes. Hahaha, no, this is the recipe, as prepared by Jay Fai and she is very famous for it. Not all Thai food has chillies :)

That young lady is extremely talented. And that was only her first attempt? If I tried to make Jay Fai’s crab omelet, the final product would be eggs soaked in grease with mostly wasted crab. That was very impressive!

Hey, just out of curiosity, how come so many of the women are wearing headscarves? Is it a market for Malaysians or something? I looked up Islam in Thailand and it says it's only about 5%, yet there seemed to be loads at that market. Unless it's traditional dress in another culture as well?

It seem like it would be very oily , Making a actual thin egg omelet then add the crab meat and then folding it , might give it a more settle taste . Or a crab cake , but just with eggs and crab meat , of course would need a small round ring to form the crab cake while your cooking it .

Actually, it was not at all oily, as I'm sure you can see from the video. When Aorn put the omelette on the absorbent paper virtually no oil came off it. Provided you use hot oil, like we did in the video, then it will not be oily. Try it for yourself, I'm certain you will be surprised. Thanks for the tips though :)

Looking at Jay Fai Batter, it has much more thicker consistency. Jay only using 2 eggs in the batter, with probably the same amount of flour, with perhaps the same or more crab meat. And the high flame characteristic but not too hot of charcoal makes Jay egg didn't absorb much oil in it.

That looks a bit fatty, I prefer the one at Kub Kao Kub Pla, which is a little more airy.
