👋Hi Guys. In todays video, I take you on a journey from the Marks And Spencer Food aisles to my dinner table and all the exciting bits in between 😁. I don't like waiting for special occasions to have a ''Date Night Dinner'' or surprise my loved ones 😕🤣. So I took a trip to Marks And Spencer Food to buy, top quality ingredients for a meal I had in mind based on some of my wife's favourite things to eat 🔥💘.
PROTEIN: Aged Lamb Leg
You only need 1.5-2mins per side and a little butter with garlic, thyme and rosemary (obviously lol) basting and then resting for at least 5 minutes.
No oven needed for this cut 😁. Incredibly tender, moist and full of flavour.
VEGTABLES: Heritage Carrots & Asparagus
The carrots I blanched in salty boiling water for 1 minute. I then pan fried alongside the asparagus. Once I achieved colour, I added 15g of butter alongside garlic and thyme and salt and pepper. I kept seasoning light on the vegetables as the potato side is rather rich and so the natural flavours of the vegetables carefully prepared will be the perfect match 👍.
CARB: Dauphinoise Potatoes
This takes about 30 minutes to prepare but I promise you it is so worth it. First of all peel and slice your potatoes. I used Maris Piper as it is a floury potato. 👩⚕️Take your time whilst slicing to avoid injury👩⚕️ I used equal quantities of milk and cream, added mustard, nutmeg, garlic, salt, pepper, thyme, garlic and brought this to the boil. Add your sliced potatoes and cook until a slice of potato just breaks between your fingers. Add your grated cheese (Ideally an extra mature cheddar and I add Emmental cheese as well for flavour and off course the stringiness 😎) and incorporate. Empty into an oven dish and top up with more grated cheese 😉. It took 16 minutes at 180 degree to get a lovely golden topping. Let your dauphinoise site for at least 15 minutes before finishing with grated nutmeg and finely chopped thyme on top.
SAUCE:
I reduced around 200ml of port and then added some lamb stock and reduced until I got the perfect consistency. Adjust seasoning to taste.
