I am an old woman that had just learned of einkorn and had watched Carla's videos. I was so inspired and excited to try to learn about sourdough and einkorn. It brought me to tears when I learned that she had passed away last year. What a terrible loss to her family, friends, employees and the world. I still watch her videos as I am learning and still heartbroken. RIP dear woman.

My heart sunk when I learned today that Carla passed, couldn't help it, tears flowed. Such a magnificent woman and a Blessed legacy. Just this past month I began studying her methods and began using Jovial Eikorn flour and organic foods and Olive oil. Blessings to her family and their future endeavors.

Im so sad to know we lost Carla, she was an amazing woman and her legacy is incredible, she taught me everything about einkorn, I will be forever grateful to come across such a great woman, she will be always an inspiration

She became sick and died shortly after. That was what their website said. Yes, very tragic. I loved to watch her instructional videos. I made my first einkorn sourdough boule today from her recipe, her instructions, and her einkorn flour. Her family is very unique and lovely. I’m glad I learned about them.

After years of IBS, and finally healing that by giving up conventional flour, and other things, it was a game changer and a blessing to find organic Einkorn flour. It’s amazing and it is so digestible my body loves it. Thank you thank you thank you!!!

Carla was an angel on earth, as she is in heaven. I know Gulia and her family carries her spirit and I'm grateful for that. My BFF in spirit was a baker, I ask she and Carla to guide me every time I bake (always Einkorn). Some days I am brought to tears by the power of it all. Or as she would say - the magic.

Dear Carla, We love your products! I am a Connecticut native and married to an Italian as well! We own an all organic healthy food restaurant in Cape May, New Jersey (with many gluten-free dishes) and use many of your products! They are wonderful for their purity, quality, lack of additives, and packaging in glass. I just made the most delicious Chocolate chip brown butter cookies with Jovial Einkorn flour tonight...got the link to this video through a cooking blog...then I looked at Jovial's website after being so intrigued by this video, and found out Carla had passed in May 2021 from a "brief illness"??? I hope it wasn't from what the awful thing that has hurt the world in the last year and currently. I am shocked. I am heartbroken for Carla's husband, children, family, and company. I will be a Jovial customer for life. I am so sad that Carla is gone. I hate it. Thank you Carla and family for bringing such a wonderful product to the masses with gluten issues/sensitivities. I would have loved to have gone to Luca, Italy and spend time with Carla.

This is a fascinating story. I learned about my wheat and gluten sensitivities age 58. My symptoms sound like her daughters. I have been on gluten free for 8 years now with great health results. I tried Jovial gf egg pasta last week and it’s the best tasting/texture I have found! I have my first loaf of einkorn flour sourdough bread rising as I type. Ordered from amazon. I sometimes feel jealous of folks who have cast iron stomachs and can eat everything. I don't eat bread anymore because they don't use Einkorn in bakeries. They use that dwarf wheat. I am sorry to hear that Carla left this world. Thank you for contribution.

Carla, Thank you for all you are doing for gluten sensitive people. I went through similar things with our first born daughter in 2002. No answers for so long and I researched and took her off gluten against doctor's orders. She did so much better. We went through that with all 4 of our girls. I'm excited to try your Einkorn flour! I hope we can figure out how to bake with it and my girls can tolerate it. If it goes well I might try growing Einkorn and Emmer on our small homestead.

I am just getting into / learning all there is to know about Einkorn too. Like u mentioned about "Emmer" , that is for sure the next on my list to learn and do more research on because I have recently too learned, that it is also an ancient primitive grain like Einkorn. 😃 I believe from 1 of the more recent other videos I have watched, that it is either like a 1st cousin to the Einkorn Grain or possibly even closer to it being more like a half brother or sister to Einkorn! ❤ & Of course that sounded amazing and something I had to add to my learning/ research more to do list!! ❤🙌😊 Blessings sent your way to u and your family. Einkron wheat is harvested in Turkey , Kastamonu... Thats the homeland for thousands of years..

yeah so it was even before the Byzantine time, it's not related to Turks but now it's still raised in modern day Turkey.

@@sue3519 nope we mostly eat white bread made from regular wheat... but einkorn is still relatively cheap compared to the rest of the world. it is more expensive than regular wheat but still affordable :)

Been making various whole-grain porridges for breakfast several times a week: buckwheat, barley, frekeh, sorghum, millet, etc. Had once used modern wheat berries, but decided against it the more I learned about it. Was so pleased to find Jovial brand einkorn berries. I now feel much better about including wheat berries in my morning breakfast porridge.

I have my first loaf of sourdough Emmer bread in the fridge for fermentation just now. Will be interesting. Cannot find the Einkorn here in Norway yet....at least not in my town.

Some old/ancient varieties of wheat are Einkorn, Emmer, Spelt, and Kamut.

I can relate to a lot of those symptoms, as I have the same sensitivity to wheat. I wish I could find einkorn locally in England. It is too expensive to buy online.

I only use einkorn flour now , the taste is so much better than anything else . I've never eaten any pasta since I found Bio Natura .. Sourdough einkorn bread takes some practice but oh my gosh it's worth the learning curve and no guilt about eating flour anymore .

I just found out that Einkorn wheat is also called Farro Piccolo (Italian) As far as I know they just call it Farro and is available in Australia.

My daughter is highly gluten sensitive. She even got leaky gut. Tested at age six. Would she be able to eat einkhorn wheat?

As I know it, there is gluten in these grains too, but it is not as strong as in wheat. I found out today when trying to develop an Emmer dough! Lol! It did not cooperate as other flour does!

Hello in dome french english translation einkorn is said to be le petit épeautre....is it true ?..in other translation they call it the little spelt!!! So since i would like to make einkorn bread i would like the real term thank you... Ps ste Hildegarde talks only about einkorn which is very good for health as what she said in the years 1100 !!!!

Just to be clear *einkorn contains gluten so is unsuitable for coeliacs and many with gluten sensitivity* although the latter group sometimes can handle rye, spelt, kamut - all my gluten sensitive wife can't handle any but had a bit more luck with barley which contains a different protein to gluten called hordenin but basically she has to avoid all these grains - why can gluten sensitives handle gluten? Well likely a percentage aren't actually gluten sensitive but most likely it is a particular prolamin that causes them issues rather than "gluten' per se

Eincorn has a much simpler genetic makeup so yes it has gluten, but much less of it making it perhaps easier to tolerate but this idea of prolamins is interesting and I would like to know more about it.

@@SandraWarmbreath If that were the case then surely people could eat less of a higher gluten wheat with no problems surely but it isn't even clear that what you say of einkorns gluten content is correct : "In general, spelt had the highest gluten content, but no difference was observed in the gluten contents of durum wheat, emmer and einkorn. All four species had significantly higher gluten contents than common wheat. However, the gluten composition of all wheat species was significantly different. Independent of the growing location, einkorn had the lowest glutenin content, followed by emmer. These differences resulted in significant differences in GLIA/GLUT, which increased independent of the growing location from common wheat to einkorn, with spelt, durum wheat and emmer in between. The GLIA/GLUT was influenced by the growing location, as already reported due to environmental conditions (temperature) and amount and time of fertilization [20]. The location with the highest protein content (SEL) showed significantly higher amount of gliadins than EKW and, therefore, a higher GLIA/GLUT. Thus, high protein content did not consequently lead to a better ratio of GLIA/GLUT and a high amount of glutenins. These findings are in accordance with the literature "; This looks more like individual proteins are more likely the problem & could be bred out but of course a whole other area of enquiry suggests the blame could lie with fructans and not gluten so who knows?

john smith I don’t know where you got all this false information from but go look up a video titled: Modern wheat vs ancient wheat see the gluten. Modern common wheat is being bred to have the highest gluten content. Einkorn barely has any gluten. It’s the cleanest wheat a human can eat given by God.

No, if you have a "gluten allergy" you must say away from gluten period! If you have a "gluten intolerance/ sensitivity", you may be able tolerate Einkorn wheat better than your average modern wheat flour and it's products.

Correct, gluten sensitivity was invented in about 2000 along with other "victim" disorders like fibromyalgia and lupus. Stop complaining about gluten and other "allergies". Take some vitamins, go to the gym, elevate your heart rate, and get strong. It worked for me ...

These diseases are just starting to show up because our foods are getting more and more modified from the normal ancient foods we used to eat. Educate yourself you swine.
