My second incredible day in Moraikobai village in the rainforests of Guyana began with more amazing activities and peeks into the local culture and cuisine. Come with me as I try some delicious bake & salt fish at a cook up in the middle of the jungle!
We started at 7 a.m. for a traditional breakfast of bake and saltfish. First, I watched a local woman named Mary boil the fish and strip it from its bones. Then, they fry the fish pieces with tomatoes, carrots, onions, celery, shallots, and other vegetables. It’s like a type of choka.

She already had the dough for the bake ready, and put on a tapioca porridge, and a fever grass tea. It helps take away your fever. Outside, I smelled some lemongrass before heading back inside the kitchen to watch them build the bake and saltfish.
In another pot, they started making some tasso, which is a dried beef stew. I tried a bit of the fish. It was very buttery!
Then, she put some oil in the pan as they rolled out the bake dough. They fried it in the oil until it puffed up, almost like a puri in India! I even got to try rolling it out. Then, finally, it was time to eat!
Next, a woman named Candice brought me a plate of wiri wiri peppers, which were really hot! Then, I tried a type of tea made from a local plant called capadulla. Then, I opened up the bake to put the salt fish inside. I loved the fluffy, flaky bread and the mix of vegetables and fish. It was so tasty!
Of course, I had to add some pepper sauce. It had some heat, but it wasn’t so bad because of all the other ingredients! Next, I tried some hard cassava bread with avocado, followed by tapioca porridge made from cassava.
It had a jelly-like consistency from the tapioca pearls and had a nice sweetness to it. Finally, we finished with some herbal lemongrass tea and pineapple! The pineapple was so sweet and juicy!
After breakfast, we went on a 30-minute hike down a trail through the jungle to see if we could see any local wildlife. They showed me a capadulla vine and a plant that they strip and use its fibers for weaving.
We reached a savannah area, where deer, rabbits, and savannah foxes live. But we didn’t see any, as people walk along this trail all the time. But it was very peaceful and relaxing to be out in nature!
Back at the lodge, I hung out in the hammock and took a 30-minute nap before it was time to start lunch! They gave me some fresh coconut water before grating the coconut meat into a bowl. Then, they rinse the coconut meat to get rid of the milk.
They added water to the coconut and squeezed it over and over again to remove the milk. The more you do it, the creamier the milk! Then, they add rice and spices to a large pot called a karahi, along with wiri wiri peppers, beef, black-eyed peas, peppers, onions, and the coconut milk. Then, it simmers and just cooks down.
We’d be eating the cook-up rice, fried trout, and cucumber on a large plantain leaf. We also had a refreshing lime juice called swank. The beef and coconut milk in the cook-up were unbelievable. I also loved the crispy, flaky trout. What an incredible Indigenous meal.
We ended with cassava cheesecake, which Mary made with milk, cassava bread, eggs, nutmeg, and cheese. It was like a custardy pudding with cherries and had a lot of flavor!
Then, a local woman gave me a necklace and a headdress they’d made me. The necklace ensures I’d come back. It was so kind! Next, we took a two-hour boat ride up the creek back to the car. What an unforgettable experience!

They really utilise the cassava...so many uses..food and drinks...the breakfast the cookup ..Also the natural environment was so calm nice to see and the guide explains everything so well.. Another very informative video..Thanks David stay safe.

Great video, love the outdoors, the lemon grass we just call it fever grass in Trinidad, the cassava was something interesting to see, the way he greated that 🥥 was my favorite part I don’t even great coconut on a greater. The material used for weaving reminds me of stripping coconut branches to make cocoyea broom. The cook up look tasty just like a trini pelau

Very nice video, David. I love how you partake in all parts of each culture. The Amerindians are our First Nation people like we have here in The USA and Canada. Their culture is very much incorporated into the total Guyanese experience. We are a true multi cultural nation. Each culture is very important. I wish all Guyanese see it this way. Your visit and filming there gives the outside world and also Guyanese insight which many do not know about. Very enlightening and educational. I wish you get at least 500,000 more subscribers after this visit.

The kitchen is the busiest and most special place for family bonding. It is a witness to our daily conversations with our family, from breackfast to dinner and even midnight snacks! We spent our childhood memories here, learning to cook our first dish with the our loved ones. Food looks amazing. I love how the food is so natural and just made right from mother nature. Best food ever. I love all those palm trees . Would be so nice to be there . Quiet village Beautiful. Food Rice with coconut. I'm there. There is something about eating outside that makes the food taste even better. Along with the natural elements in these dishes. When the European came to the Americas one main item was the salted cod fish was on board so you can see why the salted fish is so close to Caribbean and the Americas and glad to see the local fish banga mary ( King weak fish) is use by the locals. Also the East Indian of Guyana do make the puri/bhatoora which is fried that you mention of India when their is a Hindu festival or puja. The Dutch brought the lemon grass n breadfruit from Southeast Asia to the Americas

If your trini youre continently apart of south america…if your jamaican youre technically north american…all the countries mention are apart of the caribbean “Region”. Education has failed you if you don’t know the difference between regions and continents. But obviously youre trini cus u like stay in guyanese business thinking ur right but always come out looking stupid.

What a nice video . That village is somewhere i wouldn't mind escaping to now , especially since we are being targeted by the Globalist establishment. Self sufficiency is the key and these people have no idea how lucky they are. What a beautiful way to live.

Watching this video is so relevant because we knew some of the dishes the Amerindians prepared especially cassava bread, preserved meats using the sun's s energy, cassareep, cassava wine (piwarie) They made a lot of traditional uses of root vegetables and fruits, and meats preserved and cooked in their own innovative styles without refrigerator. Our beautiful Guyana is BLESSED naturally with different ethnicities and our cultures of foods from our ancestors are still vibrant today. We learnt to share foods from different religious festivities too. We learnt a lot from the colonial masters who introduced Queen cakes we called sponge cakes and fruit cakes , bread . We learnt from our Indian , African , Chinese and Malatoes brothers and sisters in Guyana. There is a dish called Fufu and plantain and corn from our Afro ancestors We learnt from our Indian ancestors to cook curries and lentils from the spices of India , Indo Guyanese learnt very foods especially vegetarian dishes like rotie, bakes in savoury and sweet varieties, halva, persad, puri, and the lists goes on in every cultures and religions. Hi David, where dd you put all that food. If that was breakfast, I can imagine what lunch or Dinner would be. Take it easy and enjoy everything. You make my mouth water. These ladies can cook. They got an A plus for the Bake. Not every woman can make it like that. The Werri Werri peper is great.' Its a household thing and everyone uses it in Guyana, glad you like it. I hope now that people understand what I meant when I say similar but different when it comes to the food. I want people to really absorb what they are seeing and understand the similarities and differences in the food. I tend to be very analytical but that's my natural instinct. I love psychology and that's one of the reasons why I question anything and anybody in their opinions. That said, I am still seeing the emphasis on food and not much history of the country through no fault of David but I was expecting more from the hosts. I love the woman who sat near David. She was so mannerly. I love the gifts they gave you David, so now David, you have to prove that the necklace works by going back🤔😄. All in all, this was very relaxing and enjoyable to watch. So on to the next one. It's Thanksgiving Day here in Canada on Monday so Happy Thanksgiving to all my Canadian friends here. I like your videos. Just one thing, how about moving a mike a little bit. It creates better sound. Right now breathing sounds often mix in and sounds becomes a bit noisy. But your videos are great. I am happy to find your channel ( a few weeks ago 😊)

David you have done a great job with your food tour in Trinidad, and now Guyana, both countries food looks absolutely delicious, however, as I watch both series, I have noticed that the interaction with the Trinidad host and people were definitely more open and welcoming, and the tours seems to be more organized whereas, in the Guyana series there at times I can see a bit of a discomfort and dead silence at times. Great episodes as I continue to enjoy Guyana.☺

😅when I was growing up we had at least 3 or 4 karais for washing clothes.I didn't understand why they were so heavy.I could never have guessed they were meant for cooking.Don't missunderstand me though they never had handles.

Lemon Grass is a herbs. It is used in cooking all over the world . The Thai People uses Lemon grass in all their food.
