Used to be one of the cheapest cuts of meat on the cow. In the late 60’s and early 70’s dad brought them home and we salt cured them and hung them in the smoke house. Made the tastiest lunch meat you could get. Sadly they aren’t so cheap now.

Gabe, you take the tongue's outer lining off before you eat it .. My Mother would take the lungs, liver, kidneys, tongue, cut it up in chunks boil it like a stew, that is what everyone had for lunch with some cornbread. She cooked this while the rest of us scrapped, cut up, wrapped the hog. We did this first big cold spell every year. Then after lunch we'd help Granny cut up chunks of the pork skin and fat, put in big cast iron wash pot and cook out the grease and then what's left is the cracklings, she canned the grease to cook with, bag up the cracklings to put in cornbread. Bones made broth that she canned, nothing went to waste. She even made chitlins with the bowels, that's the one thing I wouldn't try. Lol, We did almost same with a cow...., 😊
