If you buy coconut oil or avocado oil instead you can use more, it has a better omega 3 to omega 6 ratio, less inflammation and greatfor your heart than seed oils edit, dont over do the coconut oil, trust me on this one

You overcooked your veggies. Vegetables require just little heat else the nutrients will be gone due to heat from cooking. I'm saying this based on my knowledge as a diet and weight loss coach. Why not try adding the potatoes 1st after thr tomatoes and onions and the veggies last, so that they can be stesmed yet crunchy while preserving the nutrients. ❤
