I'm wondering why do you in Europe use rollover plows and back up at the ends instead of a regular plow and plow in lands?? thank you.

Because with a reversible plough, you just start on one side of the field and work your way across, making a nice even, level job of it. What you call regular and often called conventional ploughing needs careful marking out to match your lands, which is time consuming and harder to start each land since you are throwing soil together and easy to end up with a ridge. Also at the outside of the lands you end up with soil runs that have been thrown away from each other, leaving a trench or trough. A reversible plough allows you to do away with the ridges and troughs and the marking out to match your lands, that is needed if you do it properly.

Not if you are ploughing polder land. Reclaimed from the sea. It is done deep to bury salts and to mix sand with the clay.
