De Librije is a 3 Michelin star restaurant in Zwolle (Netherlands). Charismatic duo Jonnie Boer and his wife Thérèse- serving modern Dutch food in a former prison.
Ranked as № 46 in The World's 50 Best Restaurants 2019, De Librije offers creative modern cuisine.
The exciting menu at this influential Dutch restaurant is tailored to suit individual diners' specific tastes. Guests select four dishes from four sections comprising three seasonal ingredient combinations, before further plates are added to create a bespoke five-, six- or seven-course menu for each diner.
Located in an 18th-century former prison, the main dining area is in the courtyard, covered by an impressive glass and steel roof.
Jonnie and Thérèse: «We all eat and drink every day, but what we really enjoy is making that everyday routine a special experience, and to share our love of fine foods and beautiful wines with you. We were both born and bred in the region around Zwolle. We spent our childhood catching pike perch, picking water mint, searching for mushrooms, sneaking the punt into the decoy. My extended family is in the Netherlands. I miss them so MUCH. When this stupid virus has a cure, I want to see my best friend/cousin and go HERE.

Been a new followers of this channel, and have binge-watched the previous episodes. Therefore, a genuine cofused question: I observed this episode's production value is inferior to the previous ones. Why is this? Such a shame, because the restaurant sounds and looks great!

016ekaterina thank you for your comment. First of all we have to say that you will see one more story - from backstage io Librije. Second: every story we make is an extreme amount of work. You have to film, select, put everything together, color correct, do subtitles. Every story we make is different. And we will do more cool restaurants

@@EliteLife Thank you for replying. Perhaps I should make things clearer from my complain: It's not for the effort you're putting through, because I've witnessed it through the previous 30-ish episodes - which were all spectacular. It's the results of this particular episode which are jarringly inferior, perhaps due to ambient conditions or some backstage problems on your end. Specifically: the focus lacked in your usual sharpness; the noise was unclear and chaotic; the camerawork was confusing and difficult to follow. That's what I perceive, and what led me to complain like this. I'll look forward to the next video, still. That's why I follow you guys in the first place. Best of luck, and see you soon!

@@016ekaterina Please note that we always film live. It means that the restaurant works as usual. Due to the EXTREME lighting conditions at LiBrije (you dine almost in the dark), we had to do the most extreme color correction you could imagine. That means that we had to sacrifice some image details to share the experience with our subscribers.

I totally agree. The best restaurant in the country but poor video/sound quality. Big fan of all the episodes you post, but this stands out, and not for the good reasons.

Passion Fruit , Garam masal and blue cheese..best way to eat under to top...dude however you eat...garam masala with passion fruit is going to blow up from the back...

I love your channel, don’t get me wrong, but this restaurant is so “2000 and late” for a 3 Michelin. I had similar meals in 2011 in New York

The Japanese Kombu cha (literally: Kelp + tea) is made from powdered Kelp and tastes very umami and salty.
