I was at Safeway earlier this week and surprisingly saw white asparagus in the produce section! I would expect to see it in a jar at Bavarian World (one of our local German deli/bakery/grocery store/restaurants) but this is the first time I’ve noticed it at the regular grocery store!!

I like your videos with food content. I think you guys made good and quick way of cooking white asparagus. You could use the shell/skin and the ends with half of an orange and half of a lemon cut to infuse the cookingwater for the aspargus with a nice flavor by cooking it for 10 minutes. After that just use the water to cook the asparagus with salt and a little bit of sugar (adding butter is not really useful because fat doesn´t connect with water). The asparagus will taste al lot better and you can use the water for more asparagus. Btw. a homemade hollandaise isn´t that tricky and my grammar is a mess…

Phil, you have to take Deana out to a restaurant! (once they re-open) Pre-packaged hollandaise sauce is nothing! If Deana gives this a 10/10, eating white asparagus freshly harvested from the field the same day together with a chef-made hollandaise sauce will blow her mind. Since you mentioned that you were raised on that cheap imitation of asparagus from the glass, I just HAD TO drop this comment. :D Alternatively, at least buy fresh asparagus from a local farmer and make your own hollandaise sauce. You will not regret the effort, even though it's difficult to make! kzbin.info/www/bejne/Y3nUYmurjLV5jK8
@silkwesir14444 жыл бұрын
Yes it's difficult to make. One "cheat" to make it a bit easier, is to use a pack of those pre-packaged sauces and mix it in... So that maybe 20% of the sauce is the prepackaged one and the other 80% is what you made yourself.

EXCUSE ME|! It is season and you buy it in a jar? I guess it is cheap. Also, try to get thinner stalks, they are not as stringy and more flavoursome. Eine PRISE Salz and sugar? Never heard that before. Cut the larger potaotes into half or quarters so they are pretty much the same size. Otherwise you end up with mush and undercooked ones. So, after eating A all day, I do not want to share a bathroom with you. It is supposed to be an aphrodisiac, did you notice anything? I live in GB, and we hardly have white A here. Only jars. I will have green asparagus today, but prefer white. In my family we usually had it with Schinken and new potatoes. Or scrambled eggs is nice. or smoked salmon. My grandma had a A bed in her vegetable garden and we had freshly gestochenen for lunch.

As a Belgian i also love aspargus. I make them in many different ways but most of the time i eat them cooked with hardboiled eggs, parsley, clarified butter and a bit of nutmeg. This is called "asperges a la flamande" and it is my favorite vegitarian dish. If you want to pimp this you can add cooked ham, smoked salmon or some cured ham. If you slice the asparagus diagonally in slices of 0,5 cm you can eat them raw also. Very nice as a refreshing salad or you can stirfry them briefly in the wok. I only eat fresh ones and don't the ones in a jar because those are too mushy and don't taste as good. Grtz, Franky

White and green asparagus is actually the same plant but at a different time. The white one is picked when it is still just benath the earth, the green one is cut when it is about 15 cm (~6") above the ground. Asparagus is not harvested after June 24th. Personally I prefer freshly cooked (with some salt only) white asparagus with roasted steak or pork flavored with pepper, salt, garlic. You can have cooked potatoes with it but you don't have to, neither any sauce (some molten butter perhaps).

in germany, it is grown in hills like potatoes, but when you look across the field at the farmers picking it, they carry, a pointed trowel-like for laying concrete, and a flat trowel, and a knife, and a wicker basket, the hill is 3 feet high and you can only see them from the waist up, when they are standing in the field, the top of the hills are packed, and when you see the tip breaking the surface, you dig down and cut it off at an angle about 8 inches long, drop it in the basket, and fill in the hole , and pack it smooth with the flat trowel, and then move on down the row, looking for more just breaking thru the surface, that is why it is white, and so tender, when it is cooked, ------------------------------------------------stationed there for 6 years

I've never seen anyone in my life eat Asparagus on bread. Or with creamcheese, OR cold. Let alone the combination xD. I wouldn't say its "how germans eat this". I think the most common is Asparagus (boiled and fresh), with Ham (smoked), Sauce-Hollandaise and some potato's. The other common GERMAN Asparagus Dish would be an "Asparagus Creme Soup". But I'm from the north, so there must be a small region with a lot of sick people that eat cold Asparagus from a glas, on bread with creamcheese and ham xD jk.

Instead of boiling the asparagous try putting it in the oven! For this use fresh (!!!) asparagous that is not too thick (1cm - 1.5cm). Put them either in aluminum foil packages with a tablespoon of butter and add a bit of sugar and salt to it. Do not put too many asparagours in a package, maybe 8-10 max, they should not stick together. Alternatively to aluminum foil use a flat casserole with either a lid or cover it with aluminum foil. After trying this the first time, I never went back to boiling asparagous! My favourite serving is with a classic german style pancake with self-made Hollandaise and ham. But any classic serving goes with this style of making asparagous. Cheers from Baden :)

Best way to cook fresh Asparagus not to make it too mushy: like the potatoes, put it in COLD water with salt and sugar (one teaspoon is enough) let it come to boil and then turn it off immediately. Leave it in the hot (recently boiled) water for a maximum of 15-20 Minutes. Some other recommendations: Cleared butter ...or even browned butter is more delicious with asparagus than hollandaise. Another thing, that is very delicious: baked in the oven with freshly ground parmesan. I prefer to eat Spanish Serrano Ham or Italian Parma Ham to "Schwarzwälder", they are air dried and not too smokey...goes better with the asparagus. This year, however, I decided to eat less of it because of the horrible working and living conditions of seasonal workers within this pandemic.....sorry, I am 50 years old and we protested quite a lot in the 80ies and exploitation of people is still on my plate (and so I cannot help myself but to metion here and there that I am avoiding Nestlé products especially ...what they do is pure evil....) :(

I like to cook my asparagus on a bed of salmon with some kosher salt and dill. I take all of that and make a foil pocket that I put in the oven until the salmon is cooked. I then make hollandaise sauce and drizzle that over the asparagus. I only use baby asparagus because like Deanna said, the full size green stuff is very stringy and vegetal. You guys are terrific, I’ve had the pleasure of knowing and working with many German nationals and Phil reminds me of what a joy the German people are. I miss them.

What really is good on fresh bread is a asparagus salad with eggs in a nice citrus mustard vinaigrette. Yummy :D Edit: and Hollondaise is a no go for me. But I guess it depends on taste preferences

Btw, what I am freaking out is "mairüben Season"...love Mairüben, but you usually get them only for two weeks or so. When everyone is flipping out over asparagus, I am all into the Mairüben….before switching to asparagus.

Potatoes with Sauce Hollandaise and meatballs and maybe asparagus (I never ate asparagus). I think it's typical for Northern Germany

Hi guys, white asparagus and green asparagus are the same plant. To get white asparagus farmers keep burying the shoots as they emerge resulting in white asparagus fields looking like just a bunch of dirt mounds. I like asparagus braised with carrots and fingerling potatoes.

Little tip from the potato capital of idaho. Leave the skin on, coat it in olive oil and liberal amounts of rock salt. Then throw it in the oven. The salt will be absorbed making a crunchy outter layer and pulling the starches out. It beats potatoes done any other method including brautkertofen. You wont need butter or anything when you eat them, they will.be awesome.
