He didn't have jack shit planned. Each arc was just hamfistedly added. It was seamless during DBZ because it just went on like a continuation of the story but when Z ended, he was done. Like, done done with it. GT wasn't his & the ending of DBZ didn't have a real point to the time jump other than to show us the aged up version of the characters. Super really "Billy Gunn'd" their story closure because if they wanted to keep on track with the time jump from DBZ, then they need to end at that time period. I would actually be more accepting of DBS if they just retconned the ending of DBZ & pretended like the story just kept going after DBZ & treat DBS like how they treated DBZ when Dragonball ended originally.

I just realized that the upside of the saiyan aging process, you stay in your prime longer. On the downside, if saiyans have about the same life expectancy as humans, then it's probably a very quick and sudden shift once age does catch up with them

Probably. And they likely had no qualms about being put out of their misery once it happened, or doing it to someone else. Though they probably rarely lived long enough for that anyways. As was once said by a Hussar about Hussars "Any Hussar that lives to the age of 30 isn't worth a damn."

Alternatively, I could also imagine them having a Spartan attitude where the elders are respected, but only because the odds of actually making it to old age with their lifestyles meant you had to have been the best of the best and no one defeated you in your prime.

They certainly respected their elite, regardless of other factors like age, though as we've discussed already, age doesn't seem to be the same factor for Saiyans as it is for other species. Though Vegeta makes it clear a few times (even while killing Nappa) that a Saiyan who can't fight is useless and a liability. So perhaps a geriatric Saiyan falls under that category, but not necessarily an old one. And it would be a very Saiyan thing to do to hold onto power and prestige into old age. I guess we don't have many specifics on whether Saiyans hit a point where age begins to affect them or not, and maybe this line from Vegeta was Toriyama telling us that they just don't generally decline from old age like most species. So perhaps rather than decline, similar to what you were saying, they just suddenly burn out and die at the end of their life.
