Amazing Princess Castle Cake Inspired by Sleeping Beauty Castle

Today I am happy to share this amazing castle cake with you.
This cake design was inspired by Sleeping Beauty's castle. I had a lot of fun decorating this cake.

DIMENSIONS
・ 4” x 3” (H) round dummy/cake sponge
・ 6" x 5 cake sponge (7" height)
・ 14" round cake drum
・ Wall foam board: 13cm (L) x 10cm (H)
・ Pink Cardboard Tower (I used wrapping paper tube roll and cut it to the size I wanted): 3.5cm (circumference) x 12.5cm (H)
・ Middle Pink Cardboard Tower: 3.5cm (circumference) x 10cm (H)
・ Grey Cardboard Tower (2 in the back): 6cm (circumference) x 15cm (H)
・ Grey Cardboard Tower (2 in the front): 6cm (circumference) x 12.5cm (H)
Chocolate Ganache: I did 2 coatings of chocolate ganache

ROYAL ICING
・ Leaves: Half is Leaf Green (by Magic Colours) and Half is Chocolate (by Magic Colours) The colours are not mixed
・ Piping tip: 67
CHOCOLATE GANACHE RECIPE
・ 150g milk chocolate
・ 150g dark chocolate
・ 300g double cream
Melt in the microwave together in a bowl and mix thoroughly - OR - Boil double cream on a stove. Pour the double cream on chocolate and mix together.
PASTILLAGE RECIPE
・ 300g powdered sugar / icing sugar
・ 1 tbsp CMC gum powder (tylose)
・ Up to ¼ cup of water
Mix the sugar and CMC gum powder and add the water little by little until it becomes a firm dough. Do not add all in one go, do not add too much water.
Leave for 24 hours before use in room temperature. Do not store in the fridge
GUM GLUE RECIPE
・ ½ tsp gum powder / tylose powder (CMC)
・ ¼ cup of water (boiled then cooled water)
1. Mix gum powder and water in a jar.
2. Leave overnight and store in the fridge.
3. Use up to 1 - 2 weeks.
If put in room temperature it will become mouldy very soon.
You can adjust the consistency by adding a bit of water. It will not mix with water well, but just leave it. The next day it will all swell up like jelly.
