Idk... maybe when Boo traveled through time she found multiple pathsto take, and she Went through one door that led to Before Andy was born. She spent some time there and foujdn herself getting too attached to that version or time of the World. So using her magic or whatever she used to time travel, she left one version of herself in Andys time to live and start a family etc. there while the "real" Boo Went back even further in time to the Dark Ages of Scotland. A question about this theory though: (1) This would be an endless cycle then. Since Andys mom (maybe adult version boo #1, not yet known) gave birth to Andy and when he grew up gave his toys to Bonnie/Bonny and Bonnie goes to the same daycare as Young Child boo. Sooooo... hm.

Only time eye color can change naturally is when you're a baby, because some are born with blue eyes (like me) but the color changes within​ a year to a possibly different color (mine turned brown!). Otherwise, you gotta use contacts. Hair color can change naturally however, due to sun or just randomly. My dad's hair turned from blonde to brunette when he started puberty.

1. Boos name is Mary 2. She has dark brown hair and Emily had light brown hair and dying wasn't common back then (implied to be 70s in Jesses flashback) 3. There are multiple Jessie dolls and also the hat wasn't in her room 4. Andy was called a family toy in the first Toy Story film so who's to say that Jesse wasn't a family toy in Monsters Inc for Boo and her family. Like they made more than one Jessie doll! At one point the Jessie and Woody franchise was huge until all the kids started playing with space toys of course.
