Well you can go by yourself in-game and go to transformation menu and press "collection" button, and you can see all it's skins, and yes, you can customize any animal or transformation before obtaining them.

In the map with the dragon, go along the backside of the waterfall rock until you see a tree next to the wall, there is another boss in there that I believe is stronger than the dragon in China Forest.
