RECIPE CARD DEGI CHICKEN QORMA
Tbsp: Table Spoon, Tsp: Tea Spoon (MEASURING)
Chicken: 1 Kg ( Leg and Thigh Preferred)
Onion Sliced: 300 Gm
Yogurt: 1 Cup
Oil/Ghee: 1 ½ Cups
Ginger Paste: 1 tbsp
Garlic Paste: 1 tbsp
Coconut Milk: 1 cup
Kajoo (Cashews): 50 gm
Salt: 1.5 tbsp or to taste
Red chili powder: 1 Tbsp
Kashmiri chili powder: 1 ½ Tbsp
Basic Garam Masala: ½ Tbsp During cooking and 1/2 tbsp at the time of DUM
Mace (Javetri) Powder: 1 Tsp at the time of DUM
Nutmeg (Jyfal) Powder: 1 Tsp at the time of DUM
Coriander Ground: 3 Tbsp (fresh ground Prefered) During Cooking
Black Pepper: 1 Tbsp
Cloves: 2 Tsp
Black Cardamom: 4
Green Cardamom: 25
Cinnamon Stick: 2 of 2 inches
Bay Leaves: 3
Kewda Water: 4 Tbsp

Sir aapka bataane ka tareeka bhaut hi achha hai.....aur aapki recpies bhi bhaut hi delicious hoti hai.....sir m jab chicken banaata hoon to banaae ke baad oil upar to aata hai lekin doobara karchi marne par oil upar nhi aata ,Iska kya reason hai sir......pls bataaye ki oil upar doobara kyo nhi aapata?thank you so much sir.

Sir, koi bhi chef yeh nahin batata ki chicken kaisa lein. 1kg wala, 650 gm waala ya 1.5-2.0 kg wala. Teeno ke banaane ka tareeka thoda alag hoga shayad. Aap jaisa ki lagta hai kahin europe mein hain, yeh lagan aur peetal ke bartan kaise maintain karte hain- kali karaane ka kya karte hain. Teesri baat- Kaaju ke use aur chiraunji ke use mein se behtar kaunsa hai. Thanks

Hi chef, i wanted to know that if i take a under 700 gms chicken (we call it tandoori broiler here in dilli), it comes out fine but if supposing i take a 1.25 kg chicken and make a chicken curry, it comes out "foka" (bland and chewy). Why? What is the remedy. Marinate in raw papita/kachri, fry it first or something else? Thanks

It never happens to me or any body else. And never heard before. If you are using two different sizes of chicken are you making the equal sizes of pieces if yes the are you using more quantities of ingredients in bigger size if yes then nothing should be different

Just keep in mind for 1 kg meat there should be 250 gm onion and 250 gm yoghurt.ek pao piyaz and 1 pao he dahi.its my personal experience.if we take more,it will change the real taste.and i m glad to see that he used the same...

Lucknowi dasterkhwan wala chicken masala bataiye...wo unique dish kahi nahi milti..aapne ek baar idarish ki biryani banayi thi isliye kah raha hu...otherwise nahi bolta kyunki koi bana he nahi sakta.
