I remember some of filipinos in my place called indians "bumbay/bumbai" and when I was a child I don't really know what bumbay or bumbai means. So I thought maybe bcoz of mumbai city but as I watch some of ind street foods I saw a loooottt of onions there, and yea we call onions "bumbai" here. Indians love onions, y'all bumbai ♡

The more you watch of these Indian cooking videos, the more you understand that Indians are not concerned with hygiene. The use their bare hands to touch ingredients and eat with their hands. The also use the ground as a trash can. I think the cook dipped the ladle handle into the soup to clean the handle from any bacteria and food residue that was on it.

It's not soap you fool. It's just water he uses to rinse the ladle laden with some of the cooked whitepeas, a scoop of which he pours onto the large flat iron griddle or the "tawa". Nobody in his right mind would add soap into his cooking and that too in full view of the public.

Though this is not Delhi style Chole kulche, but definitely looks delicious. Delhi chole are not cooked- they are only boiled and mixed with all spices and onion tomatoes chillies etc as raw - no cooking for chole like in this video
